For me a drink has to be delicious, balanced, beautiful and creative!

𝗪𝗵𝗮𝘁 𝗱𝗼 𝘆𝗼𝘂 𝗺𝗮𝗸𝗲 𝗳𝗼𝗿 𝘀𝗼𝗺𝗲𝗼𝗻𝗲 𝘄𝗵𝗼 𝘁𝗲𝗹𝗹𝘀 𝘆𝗼𝘂 « 𝗜 𝗱𝗼𝗻’𝘁 𝗸𝗻𝗼𝘄 𝘄𝗵𝗮𝘁 𝘁𝗼 𝗱𝗿𝗶𝗻𝗸, 𝘀𝘂𝗿𝗽𝗿𝗶𝘀𝗲 𝗺𝗲! »

I will try and gather more information from them first, see what their usual preferences are, would they prefer something shaken or stirred? Lighter or more spirit-oriented ? And then build out their drink from those preferences.

𝗪𝗵𝗮𝘁’𝘀 𝘆𝗼𝘂𝗿 𝗳𝗮𝘃𝗼𝗿𝗶𝘁𝗲 #𝗰𝗼𝗰𝗸𝘁𝗮𝗶𝗹𝗮𝘁𝗵𝗼𝗺𝗲 𝗿𝗲𝗰𝗶𝗽𝗲?

Always a Martini - First take a bottle of Beefeater Gin, measure out;
- Beefeater Gin 600ml
- Filtered Water 120ml
- Then place this in a sealed bottle in the freezer along with your chosen martini glasses 
When ready, remove glassware and bottled Beefeater Gin from the freezer, pour into the cold martini glasses, and add a teaspoon of Dolin Dry Vermouth on top, finish with a Lemon Zest and enjoy." 𝗜𝘀 𝘁𝗵𝗲𝗿𝗲 𝗮 𝗾𝘂𝗼𝘁𝗲 𝘁𝗵𝗮𝘁 𝗶𝗻𝘀𝗽𝗶𝗿𝗲𝘀 𝘆𝗼𝘂 𝗮𝘁 𝘁𝗵𝗲 𝗺𝗼𝗺𝗲𝗻𝘁 ?

Two types of scenarios.

If they want something surprising in terms of presentation; I’ll make something that has a beautiful garnish that will see them whipping out their cameras. These drinks are usually refreshing, sour or sweet with a nice twist that is not common.

For those who drink & taste so much that nothing excites them anymore; ie Bartenders, Chefs, Taste-Hunters, Cocktail Geeks & Enthusiasts. I’ll focus on the flavour tailored to their palate. Usually they don’t care for the garnishes, so I’ll choose the sexiest glass to serve, the colour of the liquid and the glass itself becomes the garnish.

While creating new cocktail menu for Nutmeg & Clove, we always look at how we can pay homage to the history of Singapore through the lens of the cocktails. For me personally, I always use Classic Cocktails as the backbone before twisting it with flavours and ingredients I grew up loving in Singapore. 
𝗪𝗵𝗮𝘁 𝗱𝗼 𝘆𝗼𝘂 𝗺𝗮𝗸𝗲 𝗳𝗼𝗿 𝘀𝗼𝗺𝗲𝗼𝗻𝗲 𝘄𝗵𝗼 𝘁𝗲𝗹𝗹𝘀 𝘆𝗼𝘂 « 𝗜 𝗱𝗼𝗻’𝘁 𝗸𝗻𝗼𝘄 𝘄𝗵𝗮𝘁 𝘁𝗼 𝗱𝗿𝗶𝗻𝗸, 𝘀𝘂𝗿𝗽𝗿𝗶𝘀𝗲 𝗺𝗲! »
While I personally dislike this order, I can understand why customers like doing this. As bartenders, the bar is our stage as we are also here to entertain the customers. I will try to understand the basic flavours they enjoy and then try to make something they like. It is never 100% successful, if we don’t succeed in surprising them, at least we managed to shock them  haha!

My name is Céline, i'm 28. Currently, I'm in the countryside during the lockdown, otherwise I live in Paris.

What inspires me to create a cocktails are the seasonal products, the place where I am, the atmosphere. I work with my feelings.

𝗪𝗵𝗮𝘁 𝗱𝗼 𝘆𝗼𝘂 𝗺𝗮𝗸𝗲 𝗳𝗼𝗿 𝘀𝗼𝗺𝗲𝗼𝗻𝗲 𝘄𝗵𝗼 𝘁𝗲𝗹𝗹𝘀 𝘆𝗼𝘂 « 𝗜 𝗱𝗼𝗻’𝘁 𝗸𝗻𝗼𝘄 𝘄𝗵𝗮𝘁 𝘁𝗼 𝗱𝗿𝗶𝗻𝗸, 𝘀𝘂𝗿𝗽𝗿𝗶𝘀𝗲 𝗺𝗲! »
I will ask them a lot of questions about their tastes in order to try to understand them in the best way possible, in order to please them. Not disappointing is our greatest challenge !

I have also learned that my best work comes when I don’t really care about the outcome, when I am just messing around with the art supplies. True creativity requires a willingness to play with the raw materials, whether those materials are words, paint, pixels, fabric, whatever! 
I solve problems with creativity. There’s nothing more satisfying that finding the right turn of work to transform the murkiest muddle of madness into something so elegantly precise.

I’ve been bartending for 12 years and I’ve been with Employees Only NY for 9. I got my principle bartender jacket about five years ago and have been traveling for pop ups and guest shifts on behalf of the company for a long time. 
𝗪𝗵𝗮𝘁 𝗶𝗻𝘀𝗽𝗶𝗿𝗲𝘀 𝘆𝗼𝘂 𝘄𝗵𝗲𝗻 𝗰𝗿𝗲𝗮𝘁𝗶𝗻𝗴 𝗮 𝗰𝗼𝗰𝗸𝘁𝗮𝗶𝗹?

When creating a cocktail I’m usually inspired by anything from literature to a meal I ate with something special. I try to make a few types of drinks. 
Some cocktails are for me and the more industry type of drinker with challenging and unusual flavor profiles. I also love basic, simple approaches like Negroni and Daïquiri variations.  When someone asks me to surprise them, I can make them something based on previous drinks or my knowledge of the person, or something I’m excited about that suits the time of year or vibe of the room.
