​Recipe:
​1 block extra firm tofu, drained and pressed
2 tbsp low sodium soy sauce
2 tsp garlic hot sauce
1/4 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp chili lime seasoning

Preheat oven to 400F. Once tofu is pressed, cut into cubes. In a bowl combine all ingredients except tofu and mix together evenly. Add in tofu and with a spatula toss together until tofu is fully coated. Place tofu on a lined baking sheet and place in the oven for about 25 minutes.

🍱Baked smoked crispy tofu with potatoes.
Cut potatoes, rinse them, cut into wedges, spread across baking tray, add half an inch of water spread evenly on the bottom (or beer for more flavour 🔞).
~
🍞Drop smoked tofu in the middle, salt n pepper, bake at 220° for 45 - 60 min.
Flip the tofu block 20 - 30 min into baking. Add soy sauce on top of the block and leave little paddle. Let the spinach steam on tray once baking is done. Add spices to your liking, drop off olive oil and mix together. Let the flavours open in the hot oven. 😎

There are two things I get particularly excited to see in the veg box delivery. Cauliflower (of which I currently have two!) and mushrooms. There are never enough mushrooms for my liking, so it’s something I tend to buy more of. I like a mix of dried mushies, big meaty portobello ones and wild or exotic. Here’s a cracking recipe, making a feast of these fabulous mushrooms! Mushroom stroganoff.

🌱I didn’t have all the usual ingredients for a traditional stroganoff but here’s how I fudged mine; soak a handful of dried mushrooms in hot water. Meanwhile, thickly slice large portobello mushrooms and roast them in the oven with a little oil, salt and pepper.
🌱heat a pan and add a knob of butter and a splash of oil, throw in a pack of mixed mushrooms. I had oyster, shiitake and hen of the woods. Seat on a high heat to get good colour on the mushrooms. Cook until any water they release has evaporated and the mushrooms have good colour. Add a tsp of garlic granules, or a clove or two of garlic if you have fresh. Then add a splash of brandy, cook off the alcohol and turn the heat down.
🌱add a level tbsp of plain flour, cook out for a couple of minutes. Add the rehydrated mushrooms and their water to the pan, with a tsp of Dijon. The flour will cause the liquid to thicken into a paste, add a bit of plant milk to the pan and stir to create a smooth sauce. Season to taste and add the roasted mushrooms.
🌱finally stir through a handful of roughly chopped parsley and take off the heat. I served mine with mustard cabbage and bulgar wheat (one of my favourite grains).

2 ingredient banana oatmeal cookies on repeaaaattt over here 🙌🏻 they literally are just banana & oats and then you can add whatever else you want !! normally i do raisins and cinnamon but today i used chocolate chips 🤤 try these !!!! recipe - 2 bananas, 1 1/4c rolled oats (you rlly don’t need to measure anything just make sure there is enough oats to be able to form into a cookie shape) mash the bananas and add the oats & whatever add ins. bake 350 for 10 mins, let cool! •

During the first few weeks of this #socialdistancing/#isolation, I let fear and uncertainty wash over me. I was a puppet to the storm. As a result, I let things slide. But no more. I will put my health and well-being first again. So I did what any normal person would do in a Saturday night (😜) and got busy in the kitchen. Bliss balls, anyone?

Chickpea spinach pizza with a sweet potato crust 😍🍕🌱

RECIPE:
Ingredients

Crust
* 1 batch of gluten-free pizza crust (or crust of choice)

Sauce
* 2 tbsp olive oil or any other oil (divided)
* 1/2 cup tomato sauce (tomato passata)
* 4 tbsp coconut milk canned (or any plant-based milk)
* 1 tbsp balsamic vinegar (or apple cider vinegar)
* 1 tbsp hot sauce (to taste)
* 1 tsp coconut sugar (or regular sugar)
* spice mix (1 tsp each of smoked paprika, onion powder, garlic powder)
* sea salt & pepper to taste

Other ingredients
* 1 batch of easy vegan cheese sauce
* 1 avocado
* 1 15 oz can chickpeas
Instructions
1. Make the pizza crust as per the instructions in the recipe. Preheat oven to 200 degrees C (390 degrees F).
2. To make the sauce, mix 1 tbsp oil and all other sauce ingredients in a bowl with a whisk. Spread the sauce (but save 3-4 tbsp) on the pizza crust and put the pizza in the oven for 10 minutes.
3. Heat 1 tbsp oil in a skillet, add the remaining 3-4 tbsp of sauce and the chickpeas and fry for 3-5 minutes over medium heat.
4. Spread the chickpea mixture and the vegan cheese sauce onto the pizza and put it back into the oven for another 10-15 minutes (or until crispy).
5. Peel the avocado, remove the stem, and cut it into pieces and put it on the pizza right before serving. Season again with sea salt/pepper/spices if desired. Enjoy your delicious avocado chickpea pizza! .

Serves 2 people⠀
Ingredients:⠀
About 1/2 butternut squash/pumpkin – about 300gr⠀
1/4 cup of cashews – soaked in some boiling water for 30 minutes⠀
1 white onion – peeled and finely chopped⠀
2 garlic cloves – crushed⠀
1 tbsp of lemon juice⠀
3 tbsp of nutritional yeast⠀
Few sprigs of fresh thyme⠀
1/2 tsp of smoked paprika⠀
1/2 cup or more of plant milk – soy or oat are great⠀
Plenty of salt and pepper to taste⠀
1 tbsp of olive oil for frying⠀
For the miso mushrooms:⠀
About 250gr of chestnut mushrooms – sliced⠀
1 tbsp of olive oil for cooking⠀
1 tsp of brown rice miso paste mixed with 2 tsp of boiling water⠀
Pasta of your choice to serve⠀
⠀
Peel and chopped the butternut squash into bite size pieces. Steam the butternut squash pieces for 20-15 minutes until soft. Drain them and leave them aside.While the butternut squash is cooking peel and finely chopped the onion and add it a small frying pan with a touch of oil. Fry the onion on a low to medium heat for 5 minutes until it starts to caramelised. Add in the crushed garlic cloves and thyme leaves and cook for another minute.⠀
Add the cooked butternut squash to a blender together with the onion and garlic, soaked cashews, lemon juice, nutritional yeast, smoked paprika, plant milk salt & pepper. Blend until completely smooth and silky. Add more plant milk if needed.⠀
Cook the pasta according to the packet instructions. While the pasta cooks add the sliced mushrooms to pan with the oil. Pour over the miso paste mixed with water and cook the mushrooms on a fairly high heat for 10 minutes until all the liquid has evaporated.⠀
Drain the pasta and put it back in the pan and pour in the butternut squash sauce. Mix everything together and fold in the tamari mushrooms.

Für mich war das Backen dieser Kekse heute eine kleine Rettung vor den ungesunden Keksen, da wir hier noch so vegane Doppelkekse liegen haben, die ich aber nicht essen wollte, da mein Magen nach denen schnell rebelliert. Deshalb habe ich mich für die gesündere Alternative entschieden. Wobei diese auch schon wieder fast leer sind, also mal sehen, wie lange ich durchhalte. 🤭⁣

Cranberrys verwenden. ⁣ ⁣ Für mich war das Backen dieser Kekse heute eine kleine Rettung vor den ungesunden Keksen, da wir hier noch so vegane Doppelkekse liegen haben, die ich aber nicht essen wollte, da mein Magen nach denen schnell rebelliert. Deshalb habe ich mich für die gesündere Alternative entschieden. Wobei diese auch schon wieder fast leer sind, also mal sehen, wie lange ich durchhalte. 🤭⁣ ⁣ Ich hoffe, euch gefällt das Rezept. Cornflake Crusted Cajun burgers made with  Cauliflower and silken tofu by @the_clumsy_vegan . Receipe below 👇
🌶🥑 Recipe 
Ingredients:
For burgers
Silken tofu: 1 block smashed
Cauliflower: ½ head grated
Capsicum: 1 finely chopped 
Parsley: ½ C finely chopped
Nutritional yeast: ½ C
Flour: 1 T
Cornflakes: ½ C roughly crushed
Cajun spice: 2 T
Smoked salt: 2 t
For coating:
Cornflakes: 1 C roughly crushed 
Smoked salt: 1 t
Olive oil for shallow frying 
Method:
1) Mix all the listed ingredients in a bowl to make burgers.
2) In a separate bowl mix the coating ingredients
3) Make a golf sized ball with the burger mix. Roll in the coating mixture and flatten into burgers. The mixture should make 8-9 burgers.
4) Refrigerate burgers for 1 hr to firm up.
5) Shallow fry in hot olive oil on medium heat, alternately you can brown the outsides in olive oil and finish cooking in a preheated oven at 180C for 20 minutes.

En concreto lleva: lechuga, tomates cherry, aguacate, olivas cuernicabra de casa, queso @violife_foods tipo prosociano a daditos, almendras tostadas, mix de frutos secos, cebolla frita, ajo en polvo, AOVE y vinagre de módena. Con una de éstas poco más me hace falta para estar llena!
