Tempe/Tempeh: The underrated (in the West at least) star of soy-related foodstuffs.
It’s especially popular on the Indonesian island of Java, where it’s a staple source of protein. Like tofu, tempe is made from soybeans, but it is a whole soybean product with a different nutritional value and texture.
Tempe’s fermentation process and retention of the whole bean give it a higher protein content, dietary fibre, and vitamins. It has a firm texture and an earthy flavour, which becomes more pronounced as it ages.
Oh, and these two packets cost about 50 US cents in a Singapore wet market.

I miss the morning market tour with Chef Jay, visiting stalls which piled with a rainbow array of fresh fruits, herbs and vegetables. Stalls owners are so friendly & we get to choose the freshest ingredients at a reasonably good price~

When I was first introduced to the wet markets of HK it was an affront to the senses.  The smell, ( not always nice) the shouting and yelling a foreign language and the sight of all that pork hanging in the heat & sun was a complete shock to me.  Quite brutal in fact and nothing like the beautiful Gourmet Growers Markets I would frequent in Sydney. But when you’re a foodie you find yourself wandering down a path to checkout all available culinary options. And who would have guessed these wet markets have actually grown on me.  I enjoy the fact that everything is presented in crates and not packed in plastic and that the produce is fresh.  I even know where to buy sea cucumbers! 
Always wear sunblock, a hat and don’t forget to take a few canvas shopping bags, the one I am wearing is a hand made twine bag that use to be my mothers from the 1990’s.  I’m sure it’s going to last me a further 30 years with of use!-

When I was first introduced to the wet markets of HK it was an affront to the senses. The smell, ( not always nice) the shouting and yelling a foreign language and the sight of all that pork hanging in the heat & sun was a complete shock to me. Quite brutal in fact and nothing like the beautiful Gourmet Growers Markets I would frequent in Sydney. But when you’re a foodie you find yourself wandering down a path to checkout all available culinary options. And who would have guessed these wet markets have actually grown on me. I enjoy the fact that everything is presented in crates and not packed in plastic and that the produce is fresh. I even know where to buy sea cucumbers! Always wear sunblock, a hat and don’t forget to take a few canvas shopping bags, the one I am wearing is a hand made twine bag that use to be my mothers from the 1990’s. Market waste: this is how we do it!
Every day we take our pushcart to our local street market and fill it to overflowing with the green waste from the stalls. 
At the moment we’re getting a LOT of cabbage! Which we like. It makes great compost. We get around one-third of a ton per day and could easily get more if we had time.
We make sure there’s no plastic in it then we shred it in our machine. Shredding it makes our process faster and easier.

Being a city girl, the fishes for cooking I see are typically from the supermarket - usually all nicely fillet. Or if they come whole, in various shades of silvers, golds and grey, with the occasional pops of red from the snapper or salmon.

So walking through the wet market and seeing the dazzling array of colorful fishes - I must admit, it kind of dampened my appetite. You know - the theory that bright colors are nature’s version of a poison warning? The fact that the fishes still retain their colors indicate how crazy fresh they are, but my brain just went flashing warning signs all over.

So my best friend and I had to walk a few rounds before our brains settled into a more cooperative mode. The stall keepers were quite amused because we clearly didn’t know what the hell to do. But we did settle on a fish! And prawns! And squid! The meal was par excellence.

This old lady in 📽️Swipe ➡️pushing her fish cart around selling fish tries to put money in Zidane's pocket. I managed to record her at our 2nd encounter with her. We bumped into her 3x total and every time she'd try throwing the boys money~ 2000won which is about $2USD.
She looked so annoyed that we wouldn't take it and after the 3rd time bumping into her, we laughed with her and gave her a hug and pleaded no thanks 🤗🙏 which lightened her mood.

How I miss walking on the Mysore streets and into the markets during the weekends. Our rituals were simple and meaningful. We would leisurely slipped into the hustle of a dusty crowd and end up in our usual coffee shop. As time passed, we would observed the changes with fresh produce. The Southwestern Karnataka Winter is short, so these little plump figs were deeply admired and savoured to our hearts’ content. #happydays
