Step 1- Cook sushi rice. Rice & water ratio 1:1. Make a mixture of rice vinegar, 2 part sugar and 1 part salt. Mix that evenly with the hot cooked rice. Let the rice cool down completely. Set aside.
Step 2- How to make sriracha mayo? Incase, you can’t find sriracha mayo, take any hot sauce & mix with regular mayo. Taste it and add according to your spice level.
Step 3- Make sweet potato tempura! Make a mixture of 1 cup flour, 1 tsp baking powder, salt, pepper & red chilli powder to taste and ice water. Make a slightly thick batter. Coat the sliced sweet potatoes and deep fry. You can use avocado oil to fry these in case you don’t want your fries too oily. Very neutral in taste and good for your health as well. Fry them all and set aside.
Step 4- Collect all ingredients. Slice all your veggies like mango, avocado, kiwi, etc. Cover your sushi mat with cling wrap or plastic wrap so that your mat doesn’t get dirty every time you make a sushi roll. Take a bowl of drinking water as well.
Step 5- Place your sushi mat. Take a nori sheet and spread sushi rice. They’re quite sticky so use that bowl of water every now and then. Now, you can either flip the side (if you want rice part to be on the outside) or not (if you want the nori sheet to be on the outside part) Totally optional.
Step 6- Place the filling and roll carefully. Watch some youtube videos if you’re making this for the first time as well. I watched like so many. Anyways, once your done rolling, slice them into pieces. One roll gives you 8 pieces easily. Depends on how thick or thin you cut them.
Step 7- Add toppings and serve with soy or wasabi. Enjoy!
Note: This was my first time making sushi at home. I’m no sushi expert so don’t judge please. Also, this isn’t the authentic style/recipe, I know. My family is too desi so they don’t like sushi very much. Hence, I tried making a vegetarian version with whatever ingredients I could possibly find.
