PIMENTO DIP FOR THE WEEK — This is one of my favorite things to make on Sunday mornings and keep the leftovers for the week. This pimento dip is complex in flavor for a dip and has a smokey finish that honors any piece of bread you have at home. I used @maldonsalt smoked salt along with smoked paprika. We get fancy with some smoked salmon and herbed sour cream with it, finished with a pink lemon. (Yes the kind you make pink lemonade with)

PITA RELLENO CON VEGGIES + YOGUR GRIEGO 🍅🧅

Serves 2 (or 4 si solo se comen la mitad – we didn’t kid ourselves 🤭)
•
INGREDIENTS: 🥄2 Pita enteros (usamos Toufayan integral que teníamos en el congelador)
•
🥄½ tasa de queso feta crumbled (¼ por x 2 pita)
•
🥄¼ a ½ tasa de yogur griego plain (acá usé Chobani, pero usualmente tengo el Member’s Selection de PriceSmart que es top igual).
•
🥄1 tomate picado en cuadritos (como para pico de gallo)
•
🥄¼ de cebolla picada, usé morada que tenía en la refri (same as above) •
🥄½ - 1 tbsp aceite de oliva extra virgen
•
🥄½ diente de ajo rallado
•
🥄Sal y pimienta al gusto (le eché más pimienta que sal)
•
🥄Opcional: un par de aceitunas picadas (él no es fan de las aceitunas, asíque hice la mezcla sin ellas y se las agregué al mio después).

INSTRUCTIONS: 🥄Cortas los pita por la mitad
•
Les agregas el queso feta y los pones en el hornito/grill/horno
•
🥄En un bowl, colocas los vegetales, ajo, yogurt, aceite de oliva, sal y pimienta
•
🥄Revuelves, pruebas y sigues condimentando al gusto if necessary
•
🥄Revisas que los pitas se tuesten lo suficiente como para crear el crunchy-ness pero no tanto como para que se rompan y no puedas rellenarlos

🥄Asumiendo que todo salió bien, rellenas los pita, los sirves and #ENJOY 🤤

Asique me fui con el yogur griego, que además de los probióticos, aporta cremosidad y proteína.

Your health encompasses so many different elements; physical, psychological, spiritual, social and emotional health. Ingredients: 
Leftover Arabic bread / kubus .
White Sauce 
Chicken Sauce.

Ingredients For Chicken Sauce :
Boneless chicken cubes 
Green Kabab Powder 
Salt
Pepper
Tomato purée 
Chili sauce 
Soya Sauce
Red Chili Flakes (optional)
(You can use red kabab powder also)

Layering : 
Spread white sauce to your baking dish & palace one kubus / bread. 
Spread the chicken sauce & again layer with kubus then spread generous amount of white sauce..repeat. 
Finally add the white sauce , sprinkle chili flakes , oregano & parsley. 
Bake for about 15-20 mins & It’s Ready. 🤩 ‎لازانيا خبز عربي مكونات: بقايا خبز عربي / كوبوس. صلصة بيضاء صلصة الدجاج. مكونات صلصة الدجاج: مكعبات دجاج مخلية مسحوق الكباب الأخضر ملح فلفل معجون الطماطم صلصة الفلفل الحار صلصةالصويا رقائق الفلفل الأحمر (اختياري) (يمكنك استخدام مسحوق الكباب الأحمر أيضًا) طبقات: نشر الصلصة البيضاء على طبق الخبز وقصر الكوبوس / الخبز. نوزع صلصة الدجاج ونضع طبقة أخرى من الكوبوس ثم ننشر كمية وفيرة من الصلصة البيضاء. وأخيراً أضيفي الصلصة البيضاء ورشي الفلفل الحار والأوريجانو والبقدونس. اخبزيها لمدة 15-20 دقيقة وهي جاهزة. 🤩

Finely chop tomatoes, onions and coriander.
Add chopped tomatoes, onions and pomegranate to the sweet corn before adding some chilli powder and salt to taste.
Add 1tsp lemon juice to the mix and stir well. 
Season to taste.
Transfer to a bowl and serve with a garnish of Howdah Bombay Mix and coriander.
Serve and devour immediately.

Nectarine and BlackBerry Yoghurt Cake by @panaceas_pantry 🧡🖤 If you’re lucky enough to have flour in the pantry, I suggest you make this delightful cake: Nectarine and blackberry yoghurt cake. Nectarine season is almost finished 😭. .
Here’s what you’ll need:
.
Ingredients

1 1/2 cups (180g) plain flour.
2 tsp baking powder.
1/2 tsp salt.
1 Tbsp lemon zest.
1 cup vegan yoghurt (the very thick kind).
2 tsp vanilla extract.
3/4 cup coconut sugar.
2/3 cup grape seed oil.
2 x nectarines- stone removed and diced.
2 x nectarines- stone removed and sliced into wedges.
1/4 cup apricot jam.
.
Method.
1. Preheat oven to 180 degrees C. Grease an 8 inch pan, and line with baking paper. 
2. In a large mixing bowl, add yoghurt, vanilla, sugar and oil. Mix well.
3. Sift in flour, baking powder and salt, and add zest. Mix together until combined, then add diced nectarines and gently fold through.
4. Pour into prepared pan. Use a spoon to smooth out, then top with sliced nectarine and a handful of blackberries (optional). Bake 1 hr- 1 hr 10mins, or until cooked.
5. Remove from oven. Brush the cake with apricot jam. Allow to cool 5 mins before turning onto a wire rack to cool completely.

1/2 cup fresh basil leaves⁣
2 cloves garlic⁣
2 tablespoons freshly squeezed lemon juice⁣
Kosher salt and freshly ground black pepper, to taste⁣
⁣
Combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.⁣
⁣
Add it on your favourite pasta, use it as a dipping sauce or spread it on a sandwich! Super versatile and I bet you'll run out of it pretty quickly. ⁣😉

Ingredients
2 packages crescent roll dough
2 250g packages cream cheese, softened
1 28g package Ranch dressing mix
1 cup mayonnaise
2 cups cauliflower florets
2 cups broccoli florets
3 green onions, sliced
2 cups cherry tomatoes, halved
1 cup cheddar cheese, shredded

Instructions
Preheat oven to 375F.
Spread crescent roll dough on a cookie sheet. Pinch together the seams to make into one big dough rectangle. Pinch around the edges to make the crust.
Bake crescent roll dough for 12 minutes or until golden brown. Set aside to cool.
Add cream cheese, ranch mix and mayonnaise to a bowl. Cream together with an electric mixer on low speed until combined. Spread on baked crust.
Spread veggies evenly over the ranch dressing. Top with cheddar cheese.
Cut into slices and serve cold. Refrigerate any uneaten portions.

Cream together with an electric mixer on low speed until combined. Spread on baked crust. Spread veggies evenly over the ranch dressing. Top with cheddar cheese. Cut into slices and serve cold. Mettere un po' d'olio es uno spicchio d'aglio in una padella.
Far imbiondire l'aglio ed aggiungere il radicchio, facendolo rosolare per un po'.
Salare e mescolare fino a quando il radicchio appassisce.
Rimuovere l'aglio.
Tagliare il formaggio Fontal a dadini: si può scegliere di metterlo sul fuoco con il radicchio, facendolo sciogliere completamente, oppure servirlo accanto al radicchio nel piatto.

This recipe tastes like a mix between a chili and a soup and it is SO good. When I come around to making this one again, I’m going to try it with ground chicken or ground turkey, just to give it more of that “chili” feel. But either way, this is a GREAT freezer-friendly meal that you can portion out, freeze, and defrost any time. (By the way, if you have any extra leftover ingredients like cheese or sour cream, throw them on top!)⁣

🥘 Ingredients:⁣
1 lb. boneless skinless chicken breast (cut into ½ portions)⁣
½ yellow onion⁣
2 cloves garlic⁣
2 tsp. cumin⁣
1 tsp. oregano⁣
½ tsp. coriander⁣
½ tsp. salt⁣
½ tsp. cayenne pepper⁣
¼ tsp. black pepper⁣
1 (14.5 oz.) can diced tomatoes⁣
2 (4 oz) cans diced green chiles⁣
1 (15 oz.) can corn, drained⁣
1 (15 oz.) can white beans, drained and rinsed⁣
3 cups chicken broth⁣
2 tbsp. olive oil⁣
⁣
Heat 2 tbsp. olive oil in a large pot over medium heat. Add the onion and garlic. Sauté 2-3 minutes, or until fragrant. Add the cumin, oregano, coriander, salt, cayenne pepper, and black pepper. Sauté an additional 2-3 minutes. Add the tomatoes, green chiles, corn, white beans, and chicken broth. Stir thoroughly and then gently lower the chicken breast portions into the pot, making sure they are fully covered by the liquid.⁣

Bring to a boil and then reduce to a simmer, cover, and cook for 25-30 minutes. At this point, remove the chicken breast portions from the pot and place them on a separate plate. Shred them with a fork and then add the shredded chicken back to the pot. Allow to simmer uncovered for 15-20 more minutes so that the chili thickens. Serve as is or top with your favorite toppings!

Oddly enough for me...I’ve been sick and just barely starting to feel slightly normal after 10 days so the simpler the better. Which sucks, since I would’ve loved to experiment with pasta making, bread making, ramen broths and so much more. Anywho, if you’re looking for simple I’ve got so many ideas! Here is a 20 min lentil soup recipe I think you’ll love. Traditionally, the consistency of this soup is thicker and has more texture. I wanted a more velvety version of it so I thinned it out and puréed it all the way. Enjoy♥️

Recipe:
1tbs olive oil
1C split red lentils, rinsed with stones removed
1 small onion, chopped
2-3 cloves garlic, chopped
3C veggie broth (for vegan) or low sodium chicken broth
1 tsp cumin
1 tsp turmeric
1/2 tsp sumac
1 lemon, juiced
S&P to taste
Optional Garnish - EVOO, crumbled feta, chili flakes
1️⃣On met heat, add olive oil to large sauce pan
2️⃣Add onion and sauté 2-3 min, add garlic. Cook 1-2 min 
3️⃣Add lentils and turmeric, cumin and sumac, cooking spices off for 1-2 min
4️⃣Add 3 cups of broth and bring to a boil
5️⃣Reduce heat to medium low and simmer uncovered until lentils are very tender, about 15 min
6️⃣Add lemon juice and Season with salt and pepper
7️⃣Transfer to a blender or use an immersion blender and purée until smooth and velvety (be careful). 8️⃣Taste again and season if necessary. Serve with a drizzle of evoo, crumbled feta (leave off for vegan) and crushed red pepper.

➕When time is up, quickly drain the boiling water and shock the eggs with cold tap water to stop them from cooking.
➕Carefully peel the shell. Slice each egg in half.

Fish casserole with shellfish. Think Mediterranean, homemade, easy and yet super flavourful. Bonus, it doesn't even take 30minutes. 
The story behind: I wanted to make baby clams with sauce as a starter but I didn't have enough, so I transformed my classic clams recipe into this fish casserole by simply adding the hake into the combo. I couldn't have been happier with the result. So... don't be afraid to try things out and experiment with your classic recipes! We can sometimes get proper wins, but if we don't take the risk we'll never know. ------
{INGREDIENTS} (yields 2) - 1 small-medium onion, thinly chopped - 2 garlic cloves, minced - The flesh of 2 small ripe tomatoes, shredded - 250g baby clams (or similar shellfish) - 50ml dry white wine - 4 hake stakes - Flour, to coat the fish - Thyme (dry) - Olive oil - Salt - 2 parsley stalks, and extra to garnish {METHOD} 
1. The day before/in the morning, put the clams with salted water in a bowl and change the water midway. This will help with getting sand out from the clams. 
2. In a pot (I prefer a heavy duty one for casseroles) prepare a sofrito with the onion, garlic, tomato flesh and a pinch of salt at low heat. 
3. While the sofrito gets going, prep the hake. Season it with salt and time, coat it with flour, remove any access and fry it, starting on the skin side (time depends on the thickness, but don't worry too much if it's undercooked as we will cook it further later), 4. Back to the sofrito: cnce the tomato water has evaporated (you will see oil at the bottom again) and the onion has softened, increase the heat to medium and add the wine and parsley. 
5. In parallel, drain the clams, put them in a pot with a lid (no other ingredients) and heat them until open. They will be steamed with their one water. 
6. When the wine has evaporated, add the clams with the water they have released. This will make it saucier and enhance the fishy flavour.
7. Stir for 1 minute and add the fish to the pot very carefully. 
8. Cook it all together at a simmer for 3 minutes, cover with the lid and let it all rest for 5min. 
9. To serve it, you can sprinkle some roughly chopped parsley.
Fish casserole with shellfish. Think Mediterranean, homemade, easy and yet super flavourful. Bonus, it doesn't even take 30minutes. The story behind: I wanted to make baby clams with sauce as a starter but I didn't have enough, so I transformed my classic clams recipe into this fish casserole by simply adding the hake into the combo. I couldn't have been happier with the result. So... don't be afraid to try things out and experiment with your classic recipes! Penne Alla Vodka 
Saute the garlic and onions in 2 tablespoons butter in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

ALOO CHAT ROSTIE

YIELD 2 PERSONS .INGREDIENTS.
Potatoes 200gms
Spring onions 80gms
Ginger 25gms
Green chillies 2nos
Capsicum 1 small
Coriander leaves handful
Mint leaves few
Raw mango 1 medium slice
Butter
Cheese 200gms
Olive oil 1tbsp
Garam Masala powder 1tbsp
Chat masala 1tbsp
Black pepper to season
Salt to taste .METHOD. 
Peel and chop potatoes
Soak them In water to avoid darkening
Quickly blanch them
Heat olive oil in a pan crackle bird eye chilles
Add them to blanched strained potatoes
Chop all veggies and add them 
Grate cheese in the mixture
Toss toss toss
Add some olive oil
Add all. Masalas
Black pepper and salt to taste
Mixture is ready 
Heat a pan again 
Add butter 
Later the rostie
Add some cheese on top
Flip flop flip
Roast till Golden brown 
Ready to serve.

م ك ليمون 
ماء زهر 
الطريقه : 
بنحضر القطر و بنتركه يبرد
بننقع اليانسون الحب بالمي المغليه لمده نص ساعه 
بنخلط كل المقادير الجافه مع بعض بالخلاط او بالايد
بنضيف عليهم الزيت النباتي و زيت الزيتون و بنخلط
بنضيف المي السخنه مع اليانسون الحب و بنخلط 
بنمد العجينه بصينيه مدهونه بالزيت و بنقطعها و بنتركها ترتاح من نص ساعه لساعه مغطيه. 
بنحمي الفرن ل 180 
بندهن وجه العجينه بشويه قطر و بندخلها الفرن لتستوي و تتحمر تقريبا 30 ل 40 دقيقه 
اول ما تطلع و هية سخنة بنشربها بالقطر البارد و بنتركها تبرد و بنقطعها و بنقدمها

Quick fried rice comes to rescue when you are hungry & in a hurry.

Recipe:
Leftover white rice, carrots, beans,eggs,
pepper powder, soya sauce, sriracha sauce, honey, oil.
Heat oil in a wok,beat the eggs in a bowl with salt & put to the hot oil & scramble. Now add beans & carrots to it. Add salt,pepper close the lid & allow the veggies to cook. Now put soya sauce,sriracha sauce, honey & mix well. Then add rice to the pan & sauce on high flame. Keep stirring don't let it burn. Adjust sauces,salt & pepper as per your taste buds. Garnish with coriander leaves & serve hot.
