Early and light dinner for a Sunday 😍 we very very rarely have fish in, even before we stopped buying meat, so this Salmon tasted extra good... especially with a glass of Pinot 🥂

Last night’s pantry meal. I feel like @alisoneroman would make something like this .... garlic, anchovies, tomato paste, Parmesan... a total umami bomb. Check it out 👇

Recipe serves 2
- 8oz dried angel hair pasta
- 6-8 fillets of anchovy
- 2 garlic cloves
- red pepper flakes
- 1/3 cup white wine - 2 tbsp tomato paste
- 3/4 cup tomato purée
- high quality jarred sardines - Parmesan cheese
- black pepper

Salt water for pasta and bring to a boil
. 
Meanwhile, sweat anchovies in 2-3tbsp of olive oil over medium heat. Once they have started to dissolve, add garlic and a pinch of red pepper flakes until fragrant ( 1 minute ) the deglaze with a dry white wine and let the alcohol burn off for another 2 minutes.

Add tomato paste to the deglazed pan and allow to caramelized for a minute or two before adding the tomato purée. Reduce to medium low. Cook for 3-4 minutes to blend flavors then reduce to lowest setting and nestle in the sardines to heat through. Your pasta water should be boiling by now.

Add pasta to water. Angel hair cooks very quickly. Take out within 2 minutes and transfer directly into skillet while reserving 1/2 cup of pasta water. .
Add 1/4 cup of water to pan and swirl the pasta around. It will continue to cook and absorb the liquid. If you need more moisture, add more pasta water.

To serve, sprinkle with some black pepper and grated Parmesan cheese.

Soya and Garlic Salmon w/ asparagus and roast potatoes

Super easy high protein lunch, and perfect for boxing up and reheating the next day

1 salmon fillet
100g baby potato
1tsp ground garlic
2tbsp soy sauce
2tbsp dried thyme
5 asparagus stalks
2tbps olive oil

1. Preheat oven to 180°C

2. Cut potatoes into quarters and place in a baking tray with the olive oil and thyme. Mix around until the potatoes are well covered and put the cook potatoes in the oven for approximately 25 minutes. You may want to keep turning them whilst cooking so stop them sticking.

3. Place the salmon fillet on a piece of Aluminium foil. Lift up the sides as to make a bowl and carefully poor the soy sauce and garlic powder over the top of the fillet. Fold the foil over the top making sure the salmon is complete wrapped. In a separate baking tray cook in the oven for 15 minutes (put in 10 mins after potatoes)

4. When the fish and potatoes have 3 minutes left. Put the asparagus in a pan of boiling water (or even better in a steamer) and cook till tender but not mushy

Enjoy! Maybe with a little light Mayo, I sometimes do a mix of both brocoli and asparagus if you prefer or chuck some sweet potato into the mix for even more colour!

Salmon head in tamarind miso soup (Sinigang sa Miso)

Ingredients:
1 tomato (medium dice)
3 cloves garlic (crushed)
1 red onion (medium dice)
2 green chillies
1c radish (oval cut)
1c string beans (3in long cuts)
6 okra
2c Kangkong leaves
4c water
1kg salmon head
1pack tamarind paste
1/4c Miso
Salt
Pepper

To cook:
Boil tomato, garlic, and onions in water.
Add the radish, okra, and string beans. Simmer for 3mins.
Put in the salmon head and season with salt and pepper. Add the tamarind paste and miso then simmer for 10mins.
Add the Kangkong leaves and green chillies and simmer for another 5mins.
Serve hot.

Notes:
You may use mustard leaves instead of Kangkong leaves.
Tamarind powder may also be used instead of tamarind paste. Adjust the seasoning depending on your taste. Some people like the soup more sour :)
Salmon head or belly is best used for a tamarind miso soup.
Pork or beef can also be used for tamarind soup but you may omit the miso when using meat.
Do not overcook your fish that's why I put the hard vegetables first and the fish last in this recipe.

I first sprayed my pan with Olive Oil Spray, placed sliced tomatoes on the bottom along with cut up spinach. I cracked 6 egg whites & one whole egg on top of the tomatoes & spinach. (I know that’s a lot of eggs, but you already know, home girl can eat 😉). Seasoned with a bunch of @traderjoes Everything But the Bagel Seasoning. Covered the pan & let It cook! So simple! Paired with a side of Avocado & Blueberries! Emm emm! Delish! 😜🥑

Mediterranean Tuna Salad on a French Baguette. Yesterday’s lunch was this tuna salad filled with olives, artichoke hearts, roasted peppers & herbs. I keep partially baked breads in my freezer (from the local market) to pull out and bake when freshly baked bread is needed! 🥖🥖
Mediterranean Tuna Salad
2 jars or 3 cans tuna in olive oil, drained
1/2-3/4 c Greek olives, halved
1 jar artichoke hearts drained & sliced (I use TJ’s grilled artichoke hearts)
1 jar roasted red peppers, chopped
1/4 c red onion, chop & soak in cold water then drain (softens the flavor)
1-2 T capers
Mix in a bowl.
Dressing:
1/2-3/4 c mayonnaise depending on how creamy you prefer, I like avocado oil based mayo
3 T fresh lemon juice
1 t dried oregano
1/4 c fresh parsley, chop
1/4 c fresh basil, chop
1-2 cloves garlic, minced
1/2 t pepper 
Mix and sample and see if you need to adjust seasonings. Stir into the tuna mixture then enjoy on bread, lettuce or by thé forkful! 🥖🌿🥖 .

Caballa a la plancha con guarnición de tomate iberico.
Sin mucha ciencia, pintar los filetes limpios con aove, poner por la parte interior a fuego medio alto y al darle la vuelta añadir un poco de pul biber turco (o en su caso pimentón de la vera en escamas).
Servir en el plato con una ensalada de tomate iberico aliñada con aove, sal de maldon y un poquito de perejil fresco.

No rocket science. Just sear in the pan the mackerel fillets painted in AOVE from the inner part first at medium high fire. When getting color turn them around and add on top a bit of Turkish pul biber

Canned Salmon Cake Recipe! 
Canned Salmon is a great way to get the benefits of salmon that is more reasonably priced and also, with the current pressures of grocery shopping, a great protein source to keep on the pantry shelf. You can also get canned wild salmon. The added bonus with the canned version is that the bones have been cooked under pressure, which makes them easy to mash and break, dosing you up with loads more calcium, magnesium and collagen. 💪

3 Versions: Keto, Lower Carb and Normal.

2 cups of stiff (not sloppy) mashed potato (normal) / Sweet potato or butternut (lower carb/paleo) or 1 cup cauliflower mash (keto). Add 1 can smashed salmon, 1 egg, some fresh or dried herbs and salt & pepper.
For the Keto version, cauli-mash can be quite soft, so I also add ½ teaspoon of psyillium husk or 1 tablespoon coconut flour to bind.

Shape into patties. Dip into 1 beaten egg and then choose your coating: Breadcrumbs for normal, otherwise coconut flour or almond flour are great for paleo or keto.

TIP: season the coating either spicy or with S&P! You can also add some grated cheese in the mix for a bit of cheesy zing. 
Leave in the fridge for 30mins-1hr.

Shallow fry in coconut oil or ghee over a medium heat for 10-15mins, flipping gently once. You can also bake these in the oven to finish cooking after crisping the outside. Serve with a big green salad or some veg. 
Tuna is also a great alternative to salmon here. 🐟

1️⃣ Sauté sweet potato and carrot first, until  tender, yet still crunchy, then add onion, garlic, and jalapeño. Sauté for a couple minutes, then add broccoli. Sauté all together until Veggies are cooked through, but still have bite (don’t overcook - soft veggies suck).
2️⃣ While veggies sauté, scramble cheese eggs and toast croissant.
3️⃣ Assemble croissant with spinach and tomato, add a side of veggies, and done!
4️⃣ Eat up, preferably with a mimosa 🥂✨

First dish I‘m making from the cookbook Falastin by @sami_tamimi and @tara.wigley is the „Seared sea bass with lemon and tomato sauce.“ This uses lots of spices and herbs, and is delicious just with a slice of great bread. I‘m using slightly toasted sourdough!! Can‘t travel at the moment but at least I can make food from different cultures!! Try it, to change it up during confinement 😉

🙏🏼 This represents a small sample of the questions I've had. I may add more later. On a personal level, we certainly don't need to justify ourselves. But as a nutritionist, I'd like to help you understand how these subtle differences between types of foods and sources of calories/macros/micros can make or break your health. In my opinion, a good nutritionist assimilates new information and integrates it into practice. If I learn something new about health, I will never withhold it for any reason.

❓Q. If you were allergic to grains and legumes you could have been a raw or grain free vegan! If you needed more protein you could have eaten lentils or powders! There's no excuse for eating animals, ever! We are frugivores!
💡A. As you'll discover if you read my story, there is absolutely no way around the issues that I faced without the use of animal products. If there was, I'd be doing that. But there isn't, so I'm not.The inclusion of fibreless, dense, proteinous, nutrient rich, calorie rich foods is key here. You can't find these in the plant kingdom. To add: Frugivores do not eat grains, so you cannot make this argument if you eat grains or pulses. They're also not vegan - just plant based. And we do still have a diet based around plants!

❓Q. Are you still raw?
💡A. I am 100% still an advocate of raw foods and am aiming to eat most of the animal products raw when possible. I've been experimenting with raw fish with great success - raw salmon is awesome! This week I will be trying raw egg too. Raw is how nature intended food to be eaten, so for the most part, I'd like to keep it that way.

Pescetarier sind im Grunde Vegetarier, die Fisch essen, während sie auf Fleisch und Geflügel verzichten.

Die Motivation für Vegetarier Fisch zu essen, ist unterschiedlich. Oft werden ernährungsphysiologische Vorzüge genannt, die mit dem Verzehr von Fisch einhergehen. Vor allem den im Fisch enthaltenen Omega-3-Fettsäuren wird positive Wirkung nachgesagt. So sollen sie den Herzrhythmus ❤️stabilisieren, die Blutzuckerkontrolle positiv beeinflussen, Entzündungen im Körper reduzieren und so vor Diabetes und Herz-Kreislauf-Erkrankungen schützen. 🩺🧬
Meine Ernährungsweise ist überwiegend Vegan, doch ich bin auch der Meinung, dass extreme Veränderungen im Körper einiges durcheinander bringen können, aus dem Grund hab ich nicht ganz auf tierische Eiweiße verzichtet 🙌🏼 Was isst ihr so? 😋

❓Q. Surely if you were ever vegan for the animals, you'd never go back to eating them?
💡A. We absolutely went vegan for the animals. In fact, we didn't investigate the health side for a good year after going vegan. We cared so much about the animals that we gave up our beloved cheese and burgers! But the fact is, if something isn't natural, then it's damaging. And if it's natural, then it can only be ethical (nobody questions the ethics of chimps eating insects, or lions eating gazelle!). What we came to realise was that whilst most land meats and dairy required the use of weapons, tools, fire and enslavement to serve humans, fish and eggs can be acquired without the use of any of these things. They're natural foods. The argument against fish from a health perspective is especially weak, and the argument for it is very strong. To live ahimsically means to cause no harm to yourself either, and by eating a diet that had too much fiber/not enough overt protein (there's a lot of 'we don't need oert protein' brainwashing in the vegan community but it simply isn't true, especially for this gut damaged generation) we were not acting naturally. We were acting from the vegan rulebook (which we have now thrown in the metaphorical bin, thank God).

I ordered my groceries yesterday and sadly #Fish and #Tofu were out of stock ⚠️ Since I do not do Lean Meats this is going to be a challenge for me but, I would much rather go mostly #PlantBased then eat copious amounts of food that is going to make me feel #bloated and #uncomfortable. I’m really focusing on my nutrition and re-feed days. Although I feel like my ‘at home’ workouts aren’t as #intense and strenuous as my gym workouts, I’m still getting a good #sweat in and burning #calories. It’s a completely different kind of #workout using mostly my own body weight, dumbbells and some resistance bands but I’m making it WORK. I refuse to make #excuses for certain foods being “okay” during a #Quarantine 🦠 just because I don’t have access to my ‘normal’ #nutrition. If anything, this is a fun #challenge to see how my #body reacts to this nutritional change 🍴it’s all about #Balance ⚖️
