I don't know a lot about rum, but I do know that Mike is a big fan and typically likes "dark and stormies," which is basically dark rum, ginger beer and lime juice. 🥃
However, after tasting the Reserva Exclusiva, we learned that it's actually really good served neat and has flavors of subtle orange and maple syrup and shows off a gorgeous amber color. I didn't want to mess with it. 🥃
When I started to think about what food to pair with it, I immediately thought of seafood. I picked up a dozen kumomoto oysters (my favorite!) to serve raw on the half shell and made a sweet lime mignonette.
I took inspiration from the flavors of a dark and stormy, and brought those into the mignonette rather than the drink. I figured the lime juice, lime zest, sugar and ginger would be oh-so-good with the fresh oysters and would pair really nicely with the smooth finish of the Reserva Exclusiva... and it. was. delicious. #HowIDiplo
