Insta worthy dinner vs. reality .

Tonight's dinner was one for the books. I made a shrimp stir-fry with coconut rice and it hit all the requirements... delicious, simple and balanced. Holla!

Our meals haven't changed much over the last few weeks, so this little dish was well welcomed! 
Coconut Rice

Ingredients 
2 cups white rice @traderjoes 
2 cups coconut milk (from a can)
1 3/4 cup water
dash of sea salt
coconut spray

Directions:
Spray a saucepan with coconut oil. Place all the ingredients into the pan and follow the cooking directions on the bag of rice. To keep it from sticking to the bottom, stir rice occasionally until the water starts to boil.

👉🏻1 scoop ice cream sandwich Level-1 – you could probably use another flavor, but I LOVEEEE dis one *snag free shipping with the @1stphorm link in my bio*⁣
👉🏻1 tbsp black cocoa powder – you could probably use regular cocoa powder, but this stuff is fire it’s legit what they use to make oreos ⁣
👉🏻1 serving SF chocolate pudding mix⁣
👉🏻Dash of baking powder⁣

Mix all of the dry ingredients really well so there’s no clumps then slowly add water and mix until you get a consistency like brownie batter! Microwave for 30-45 sec depending on your microwave. V IMPORTANT: do not overcook it! I personally undercook it a bit to keep it gooey (swipe to see the goodness😍)⁣

Then I finish it off with sprinkles and whip bc life is too short not to! 🤪⁣

Now more than ever, people are doing everything to keep their immune system going strong. And Vit. C is a great way to do it! But you don’t have to take a supplement to get in your daily intake of it. Foods like broccoli, cantaloupe, kale, kiwi, papaya, sweet potato, strawberries, and tomatoes have enough in one serving to cover you for the day!

I have also learned that not only does Baskin Robbins exist in Japan, their limited edition flavors are far more inventive than in the US. You DON’T need to cut out carbs or restrict your body! 🤯

Let’s use this analogy for example: Say you get paid from your job, you spend 80% of your money on the things you NEED. Paying bills, rent, insurance & groceries. Once your needs are paid for, you have 20% of the money left. You could then buy a new outfit, new shoes or get a manicure. 🤩

Your macros are the same. You should be using your macros/ calories on foods you need. Like lean protein sources, fruit, vegetables, essential fats and healthy carbs. Then you can use some of your macros on the foods you truly enjoy but still stay within your “budget”. 🎉

Obviously the more you focus on healthy whole foods the better you will feel. Your skin will look better, your bloating will go down, you will absorb nutrients properly and you will see results a lot faster. ✅

Some people can stay consistent eating 100% clean whole foods, and others cannot. But there is no reason that you can’t maximize your results by eating cookies or ice cream at the same time. 🍪

1:51:53 about a minute & 10 seconds off my first half time and through the up & down roads of Eltham with a very patchy training lead up. Incredibly stoked at this result.

I have nailed my pre race nutrition plan and also my race hydration and fuel strategy and this made me even prouder. In my first half, I fell apart at 16 ks, but today I remeber passing the 16 k mark feeling ready to dig deep and bring home the last 5.1... I'm just going to end this by saying that when people intentionally bring you to your knees by dumping their own hate on you. Gather it all up into an imaginative basket and shred it up like confetti, so when you're back on your feet, you can sprinkle that confetti dust everywhere and dance underneath it 🎊🎊🎊

1: Those who start focusing in on everything that is going wrong, and allow themselves, and their emotions to be controlled by their external environment.

2: Those who are aware of their environment, but make the conscious decision to ignore the noise of everything they can’t control and focus in on the things they can control.

Instead of being upset that the gyms are closed, take this opportunity to workout from home with family and loved ones, maybe build your own at-home gym, or take up something new like yoga.

Instead of focusing in on how restaurants are closed, take this time to actually learn how to cook, and make a meal with your loved ones or significant other.
__
Instead of being upset your normal food might be out of stock, learn how to track your macros and how other foods can fit into your lifestyle, and goals.
__
We all have an opportunity to come out of this situation more in-tune with what it is we want out of life, and ourselves.

Only if we make the personal commitment to ourselves to focus in on the things we can control, and ignore the things we can’t.

Prep your food.

Get your workouts in.

Read a book.
__
Appreciate your loved ones.
