It has been way too hot to cook just about anything lately. I’ve been eating salads for lunch most days because they’re quick, simple and hit the spot every time!
My go-to lazy lunch:
🐟 Canned light tuna
🥬 2 handfuls of greens
🥑 1/4-1/2 small avocado
🍅 Handful cherry tomatoes
🌶 Handful chopped sweet peppers
🥒 Handful cucumbers
🌱 Fresh basil
Another handful of other veggies I have on hand 🥦 🥕 🍄
Drizzled with EVOO and balsamic vinegar 😍
☑️Reminder: A good salad is more than iceberg lettuce, a wedge of tomato and slice of cucumber!
✨Include some or all of the following to level up your next salad!
🥑Healthy fat - a thumb sized portion of avocado, olive oil, nuts or seeds
🍋 Acid - lemon juice or balsamic vinegar
🍓Sweetness - fresh or dried fruit (berries, apple, pear or dried cranberries)
🌿 Fresh herbs (basil is my fav)
✨For a full meal, remember to add your protein and some whole grains!✨
