BAKED CHICKEN, SWEET POTATO, CHICKPEA AND TOMATO

WHAT YOULL NEED!
* 1 tbsp olive oil
* 4 free-range chicken thighs
* 2 medium red onion, finely chopped
* 2 garlic cloves, finely chopped
* 1 tbsp dried mixed herbs
* 1 tbs of smoked paprika
* 2 punnets of cherry tomatoes
* 400g tin chickpeas, drained and rinsed
* 300g of cottage cheese
* 1 large sweet potato, cubed

WHAT TO DO 🤔 
1.  Cube the sweet potatoes and steam until soft and set aside (I cheat and steam them in the microwave to save time - just add a small amount of liquid)

2. In a large deep frying pan, heat the olive oil over a medium heat, then brown the chicken, skin-side down, for 4-5 minutes until golden and crisp. Set aside on a plate.

3. In the same pan, fry the onion and garlic for 2 minutes, then stir in the herbs and paprika. Add the cherry tomatoes and 75ml water, then bring to a simmer. Season the chicken pieces and return to the pan, coating them in the sauce. Add the cottage cheese and sweet potatoes.

4. Cover the pan with a lid and cook for 20-30 minutes over a low heat until the chicken is cooked through. Add the chickpeas about 5 minutes before the chicken has finished cooking. Season to taste ! Yum!

It’s going good! Last night I had a dream about eating chips, so obviously the cravings are still around 🤦🏼‍♀️ but hoping they subside soon! And I’m having a hard time find #Whole30 compliant mustard, so if anyone has any #tips please share! But besides the lows, my energy is getting better I think, I’m a lot less bloated and I’m gonna start working out again in week two, so we’ll see how it goes! •
It’s Sunday, which means meal plan/prep for the week. @Whole30 book gave me week one, so this time I’m my own, but I enjoyed it! I’m working on minimizing the amount of waste, so I enjoyed incorporating where I expect there to be leftovers in my next days meals. That way it’s kind of meal prepping the night before while you’re making dinner which is cool! •
I’m excited to keep going and to see what other changes come with eating whole!

Ingredients:⁣
-1 can of chickpeas⁣
-1/3 cup peanut butter⁣
-as many chocolate chips as you like⁣
-splash of plant milk⁣
-3 tbsp oat flour or almond flour⁣
-about 4 tbsp maple syrup⁣
-pinch of salt⁣
-1 tsp of vanilla⁣
⁣
Directions:⁣
1. First you want to open your can of chickpeas and drain and rinse them really well; then boil them in water for about 5 minutes to get rid of the bean taste; let them cool⁣
2. Combine all of your ingredients in a food processor, except for the chocolate chips and blend the mix until smooth⁣
3. Stir in the chocolate and DONE!⁣

Moussaka. (Eggplant Casserole)

🍆Another time well spent in the kitchen,  as my daughter and I tackled a traditional Greek recipe shared by her friend. . 🍆Preparing this eggplant casserole was the perfect team cooking activity as it entailed preparing the different layers separately. (1) Preparing the Eggplant
(2) meat sauce
(3) top layer Bechamel sauce (more like Mornay) 
I prepared the eggplant and she did most of the work including assembling the layers.

This recipe is brought to you by quarantine. Sometimes, I just don't feel like the ordeal that is going to the grocery store these days, so I open up the cabinets and either make tuna again, or soup. Soup rarely disappoints and is difficult to mess up, so I'll just tell you what I put in this one..all random ingredients I had in the apartment already! Chicken sausage, cannellini beans, diced tomatoes, broth, zucchini, celery, and onion. Let me tell you- the zucchini in the soup was a game-changer and something I might just be doing from now on! I also used what is now my basic variety of spices..garlic powder, onion powder, cayenne pepper, salt, & pepper. I sauteed the sausage and onion/celery beforehand, and then combined them all in a pot, brought to boil, and simmered until I was hungry (about 25 minutes).

Obsessing over banana bread? Me too. Sometimes just wanna eat the batter? Me too. Here’s some you can bake or eat! * 3 small-medium overripe banana mashes
* A few packets of swerve or monk fruit sweetener (optional)
* 1/2 cup oat flour (can blend rolled oats to produce)
* Pinch sea salt
* 3 Tbsp nut butter of choice I used cashew butter + pb
* 2 tbsp pure maple syrup can sub honey or another sticky sweeten
* 1/2 tsp of vanilla extract
* Cinnamon * Chocolate chips/nuts/dried fruits 
I wasn’t IN LOVE w eating just the batter so I decided to bake them as cookies🍪
I think we’re all in need of good vibes and comfort so I say eat all the batter you want/need during these times 🤷🏻‍♀️
