If hummus know, my bf is a total dip. But ❤olive him sooo much! Oil love him forever!

As someone with 🇮🇱Israeli roots, it has been interesting to see the cuisine's recent evolution here in NYC: From straight-up elevated with @nuryorkcity and now-shuttered @timnanyc and @barbolonatny, to gussied up with a Brooklyn edge @missadanyc, to "clean vegetarian for the people" @newtownbk, to quirky celebrity chef takes on whole cauliflower and burgers in pita @miznon_nyc. So of course, I was 🤔curious to try this fast casual spot, which prides itself on "carefully sourced" ingredients and a "modernized," "healthy" vibe, with a mission that includes feeding a family in need with every ten meals it sells.

Anyway, I was instantly 💘smitten with the airy space, especially the open kitchen, which boasts a copper-coated taboon oven. That oven is responsible for the ridiculously delicious bread in this pic, along with the roasted cauliflower featured in the 🥗salad you'll see if you swipe left. As for the hummus, it wasn't fully pureed, lending a rustic (read:chunky) appeal that I liked. Plus, it was drizzled with an intensely fruity olive oil that was clearly top notch.

I recall asking for 🌶hot sauce and being told none was available, which is how I wound up with this roasted chile as an accompaniment. It 😯surprised me that there wasn't some sort of housemade version of, for instance, zhoug, a chili pepper & cilantro paste that's a popular Israeli condiment.

So much of the time, fast casual concepts come off as soulless to me. But all in all, I liked this. I left feeling truly nourished.💕💕💕

You already know that we love pastry and quiches and now that the tasty summer veggies are finally out, it is the perfect moment for a Summer Quiche recipe.
Instructions bellow, or swipe left.

For the crust: 
In a large bowl, mix together 250 g of flour and a teaspoon of salt. Add the 125 grams of cold and cubed butter, and using your hands, a pastry cutter, or a food processor, cut the butter into the flour mixture until it has a sandy texture and resembles with wet sand. Make a well in the center and add the egg yolk and 3 to 6 tbsp of ice-cold water (it depends on the flour) – 1 at a time! – and stir with a spatula until the crumbs start to form the dough. Transfer it to a floured surface, knead it and then gather into a ball. Now it’s time for the milling: using your palm heel, mash the dough in order to incorporate the butter. Gather again into a ball and wrap it in a clingfilm and refrigerate for at least 1 hour (you can also do this overnight).
After refrigerating the dough, roll it well and transfer to a lightly greased  pie/tart plate. Refrigerate for another half an hour, then prick the bottom of the pie crust with a fork to prevent bubbling. Bake at 400°F for 20 minutes.

For the filling:
In medium heated pan add olive oil and 400 grams of sliced mushrooms, 1 tsp of salt and sauté until softened, about 6 minutes, then let it cool. Do the same with 3 cups of spinach. Meanwhile make small pieces of 200 grams of hard cheese and slice one tomato.
As a final step, beat 3 eggs with 1 cup of liquid cream and add salt and pepper.

When the crust is baked, add the ingredients one by one, the  the cream&eggs mix. Top with flax seed.Bake for another 25 minutes at 400°F.
Serve hot or cold, any time of the day!

Started by meeting the fabulous @courtcdavis for donuts at @holedoughnuts where we chatted with @lauriemoviegal (who is so awesome- everyone should go to Hole just to meet her)!

Then I spent a few hours helping my gym @strengthratio move from West AVL to its new awesome location in @ramp_studios alongside @gingersrev and dangerously close to @frenchbroadchocolate’s RAD location.

Ate lunch with @laprathe and now I’m spending some time at home before heading to the first debate watch party hosted by @buncombedems tonight at @ashevillebrewingco downtown!

Barf Gola, Falooda, or Kulfi? What's your choice of indulgence?
Barf ka gola had been very close to my heart ever since I was a kid. Something about those vibrant colors, tangy flavors and the fact that I was almost never allowed to eat them got me even more hooked to these golas. Thankfully my immunity has gotten stronger and the golas more hygienic like this one @kulfilicious_uae 
One of the best chains in D town for everything kulfi, this place, known for its quirky interiors, serves up a staggering variety of all natural kulfi flavors, some not so humble faloodas and shakes and a bunch of different barf golas.
My favorites at this place were the mango and kalakhatta barf gola, sultani falooda and banarasi paan kulfi stick.

They promised us a heat wave!! We got a gorgeous grey day instead. Perfect for bringing back sleepy sourdough starters to life. This one had lost all its mojo!

Now refreshed, revived, risen and well rested. It'll be shaped into a few good skillet muffins - to be eaten still warm, slathered in good butter, with a good cup of masala chai.

The rest will be spread and stuffed with presunto and chouriço. A "Folar" for tomorrow!

3 days in and I’ve only just managed to have my first plate of pancakes, I was starting to think something was wrong. This place has been on my list for ages and I’m so pleased I’ve finally ticked it off. I adored the rustic quality of the interior and the food didn’t disappoint. The fluffiest pancakes topped with fruit and honeycomb butter. I can definitely see myself coming back here 🌿

Baked aubergines and garden greens.
I think there is an art in cooking that perfect parmigiana. I personally found frying of aubergines are important. Good tomato base. I tend to add a half a teaspoon of sugar to bring out the sweetness of tomatoes. And not scaling back on cheese. I like to use thinly sliced provolone and Parmesan in between the layers.

When we were holidaying in Italy few years back, on our last day in Milan, we stumbled upon the small restaurant that looked more like a charcuterie house. It was hot summer’s evening with temperatures still reaching above 32 degrees at  7pm. We were pretty exhausted from the constant heat and were ready for fairly low key dinner. Few cured meats and good plonk of wine. Maybe some pasta for Kiki.

At the time, I was getting pretty frustrated with my cooking of parmigiana. I loved the dish but my method/recipe just never tasted quite as good. Baking the aubergines weren’t really good. Frying them sometimes made the whole thing too oily. The sauce tasted by itself was good but when it went into the dish, the final product just lacked the oomph. 
It was here, I had one of the best melanzane alla parmigiana. Aubergines cooked to perfection with gooey cheeses sandwiches between the layers. Rich sweet and tangy tomato sauce bringing the whole thing together with crispy crumble top. It was mind blowing good. It probably wasn’t the most healthy thing given the amount of cheese pulls I got, but I couldn’t get enough of it. 
And it was this experience that improved my cooking of the same dish immensely. Now whenever I cook this, I’m reminded of that beautiful balmy evening in the street of Milan. 💛

Dhansak is probably the most popular Indian Parsi Indian dish ever and it has evolved over time combining elements of Persian and Gujarati cuisine. Dhansak is made by cooking goat meat with lentils and vegetables. The traditional accompaniment is caramelised brown rice. Traditionally, four lentils (arhar dal, Bengal gram or chana dal, red masoor dal and brown masoor dal) are used but this may very as per family traditions.

The Gujarati element of the recipe is the liberal use of a variety of Indian spices and condiments, in contrast to the more mellow Iranian recipes.

In Parsi homes, dhansak is traditionally made on Sundays owing to the long preparation time required to cook the lentils and vegetables into a mush.
Interestingly, Dhansak is also always had on the fourth day after the death of a near one. Since no meat is consumed for 3 days after the death of a near one, Dhansak is used to break this abstinence on the 4th day. Hence, Dhansak is never prepared on auspicious occasions like festivals and weddings.

Vegetables in Dhansak may include potatoes, tomatoes, brinjal, pumpkin and fenugreek leaves etc. After prolonged cooking, the vegetables are more or less homogenized with the lentils, which are also broken down, so that the result is a rich thick stew.

Dhansak is flavoured with a spice mixture called "dhansak masala", which is similar to "garam masala" except that the spices chosen are more aromatic and sweet rather than pungent. Cinnamon, cardamom, cloves, nutmeg, dried ginger, coriander seed and cumin seed, as well as a pinch of asafetida, are among the spices employed.

I don’t believe in meal prepping. It’s hard to stay motivated when you get sick of the same food and freshness declines by day 4. I just keep good quality groceries around and prepare them differently based on my mood.

For a second I was pressuring myself into making breakfast from scratch whenever I had my partner over, but we changed our routine to sleeping in and getting nice coffees at a spot nearby. I used to feel guilty about it, but eased into being relaxed and grateful that I can afford it.
