South Indian style Vermicelli 🍴Recipe🍴
👉🏽Roast 2 cups vermicelli in 1 Tbsp coconut oil for 2-3 min. Set aside
👉🏽Roast 1/4 cup of cashews in the same pan till lightly brown. Set aside
👉🏽Tempering . To 1tsp of coconut oil, add, 1tsp each of mustard seeds, chana daal (pigeon peas), mung daal and hing (asofoetida). 👉🏽Let crackle and pop
👉🏽Add 10-15 curry leaves 👉🏽Add chopped carrots, beans, peas, chilli, 1inch piece of grated ginger and salt. Cook for 5 min
👉🏽Add the roasted vermicelli and 4 cups water.
👉🏽Let it come to a boil and cook on low medium for 5-6 min, until all the water is absorbed
👉🏽Throw some cilantro on top to make it look pretty and those roasted cashews for some crunch *most frozen mixed veg packs have chopped up carrots, peas and beans. Add in that corn which usually makes an appearance too. Its all good. 😊
