💞💞Are you turning to COMFORT food right now?? Life has been turned UPSIDE down. We are experiencing 〰️ social distancing 〰️ measures that we have never had to deal with before. We may be feeling stressed about our own health, and the health of our family 💞 & friends 💞 right now.
And it’s pretty NORMAL human behaviour for all of us to turn to comfort food when we are dealing with anxious 😨 feelings.
The GOOD NEWS...we can still enjoy our comfort food while keeping our nutrition goals! There are healthier ways to make favourite recipes, so that we can still indulge, find PLEASURE in our food...and have no guilt.
One of my hubby’s FAVE comfort meals is a rich, creamy bowl of tomato 🍅 soup, with a side of a warm, gooey grilled cheese 🧀 sandwich. BONUS ::: even some of the pickiest kids will devour soup and a sandwich!! #momwin
AANNDDD this meal is one that you can make using staples from your pantry ((👉🏼cuz grocery shopping during a pandemic means a lot of items are sold out, am I right?!!)) TRY this healthier version of TOMATO BASIL soup:
1 tsp olive oil
3 cloves garlic, roughly chopped
1/2 yellow onion, roughly chopped
1/2 red bell pepper, roughly chopped
1 (14oz) can low sodium tomatoes, including the liquid*
1/2 cup low sodium chicken or vegetable stock
Generous pinch salt
Freshly cracked black pepper
6–8 fresh basil leaves (or 1/2 tbsp dried)
1/2 cup nonfat plain greek yogurt or milk (optional)
In a medium saucepan, heat oil over low heat. Add garlic, onion and bell pepper and cook until softened, about 5 minutes. Add stock and tomatoes and let simmer a few minutes.
Remove from heat and blend with an immersion blender or regular blender. If using a regular blender, do not seal lid all the way and cover with a kitchen towel to prevent hot liquid from exploding everywhere!
Return soup to the pan if you removed it, and season with basil, salt and pepper to taste. If you want a creamier soup, stir in 1/2 cup nonfat plain greek yogurt or milk.
Ladle into bowls and top with basil or croutons, if desired. 🍅🥪YUM!! Enjoy!! (thx for the recipe Lively Table 👏🏼) Share your favourite comfort food 👇🏼
