Made pasta salad for the first time all summer and it was super tasty! Also used the new @eatbanza shapes which makes it instantly better obviously
6-8oz cooked pasta
1 cup chickpeas (rinsed & drained)
1/2 large cucumber (I scraped out the seeds)
1 bell pepper, diced
1/4 cup sun dried tomatoes
3/4 cup feta cheese
1/4 cup fresh parsley, chopped
1/3 cup fresh basil, chopped
1/4 cup oil (I used @carringtonfarms pumpkin oil)
3 Tbsp lemon juice
1.5 tsp Dijon mustard
1 tsp Italian seasoning
1/4 tsp red pepper flakes
