Okay, so this picture sucks. It doesn't do these little cups of heaven any justice at all!
What are they, you ask? They are homemade Crispy Mac n' Cheeze Cups, using @violife_foods
Parmesan Cheese with my leftover Easy Peazy Mac n'Cheezy from the other day.
Please. Please. Please. Make these. Please.
Preheat your oven to 400.
Spray a mini muffin tin with oil. Shred enough Violife Parmesan to generously fill each well, and then use your finger to create a little cheese nest. Lightly spray the pan again.
Bake for about 5-7 minutes. You'll know they are done when they are able to turn around in the pan. Not on their own, of course. If they can do THAT, you've seriously veered off course somewhere. Anyway, you want them firm enough to hold your pasta, but soft enough to basically melt in your mouth!
Now plate them, fill them with your warm & gooey Eazy Peazy Mac n' Cheezy and top with finely chopped green onions!
I bet it the best thing you've ever had! It will convert ANY non-vegan cheese lover!!
