Super easy lunch that includes a healthy dessert. 🍫🍓 I steamed (microwaved) a bag of frozen veggies, tossed the veggies with 2 tsp coconut oil, garlic herb seasoning and a sprinkle of parmesan cheese. The bag of veggies says it makes 4 servings, but when it comes to veggies, you can eat a lot.
I count it as two servings and save the 2nd serving for lunch tomorrow.
The dessert is where my protein and fiber filled carbohydrates are at. Have you heard of nice cream? It's ice cream made with frozen bananas. I changed it up a little. I take 1 scoop of my chocolate dense nutrition superfoods powder (packed with 18 grams of protein) 1/2 cup almond milk, 1/2 of a frozen banana 🍌 and 1/2 cup frozen strawberries 🍓 and blend. Tastes like chocolate covered strawberries 🍨 ice cream.
So good! I get my sweet tooth fix and a healthy, filling and satisfying lunch. 😋
