for ✌️ servings - slice and de-stem a small bundle of Brussels sprouts and sauté in heated avocado or sesame oil for about 5-8 mins over medium high heat. Add in 2 chopped garlic cloves, grated ginger as desired, 12 oz frozen riced cauliflower, and ~1/2-3/4 c of frozen peas and carrots (my bag also had corn which is totally fine), and cook for another 5-8 minutes until the frozen veggies are hot. Drizzle in soy sauce/tamari (~2-4 tbsp to your taste) and sriracha (optional). Make a large hole in the middle of the veggies, and crack and scramble two eggs in the middle. Cook the eggs through, stirring regularly to scramble. Once cooked, mix everything together and add in 12 large cooked wild caught shrimp. Serve, top with some avocado slices or your other favorite toppings, and enjoy!
