It's Thursday, which means we're one step closer to the weekend! It also means it's time for some champagne! This Ayala 2008 Blanc de Blancs has a rich and full-bodied profile, a complex nose of rose, ginger, mushroom, apricot layered with brioche, brûlée, and mixed nuts, finishes with nice lemon curd and cheese flavors. Its vibrant acidity, elegant mousse, and great depth is perfect for a hot summer afternoon. This time I used a wide tulip instead of a flute or regular white wine glass trying to better capture the aged flavors. H. Billiot & Fils Brut Réserve Champagne Grand Cru ‘Arbonnay’ N.V. is the nice side tour when stuck at an airport due to a storm. It is also good to pair with egg sandwich with crispy bacon in the morning to brighten the day. Pear, green apple, toast, lime and lemon peel shows on the nose. You also experience this on the palate balanced with a high acidity and fruit in the glass.

Life isn’t fun when you restrict carbs or the odd glass of wine here and there (or 12.5% alcohol margarita 😂). Life isn’t fun when you always have to say no. Life isn’t fun if you guilt yourself for indulge here and there.
Thanks to the #2bmindset i now have a healthy relationship with food. I like to drink. I like to party. I also like to eat healthy, fulfilling, satisfying meals with the occasional slice of cake or box of timbits on the side. I’m not at any point, going to give those things up and neither should you.
