Registered Dietitian team! I’ll be posting a simple, healthy, and immune-boosting recipe every day this week to support you staying healthy and happy.
Spruced up the broccoli I had in my fridge to make this nutritious and easy salad! Packed with antioxidants, fiber, and loads of other vitamins/minerals this salad can be eaten as a side, on its own, or mixed with pasta!
✖️1 bundle broccoli, chopped however big you want the pieces to be. You can use frozen to!
✖️1 can navy beans (15 oz.), rinsed and drained
✖️Marinated artichokes, chopped
✖️Sun-dried tomatoes, sliced thin
✖️1/2 onion, chopped small
✖️2 cloves garlic, chopped
✖️olive oil and vinegar of your choice. I used white balsamic
Simply toss broccoli on medium-high heat with garlic and olive oil for about 5 min (or depending how crunchy you want it). Then mix the broccoli in a bowl with the rest of your ingredients and enjoy!
