冬天一到,吃水果的意慾就減低,但其實只要選得對,功效各有千秋。例如屬性溫熱的車厘子可以益氣健脾;士多啤梨雖然性寒,但可利咽潤肺;平性的無花果則能潤腸通便等。按個人體質適量進食,各有裨益。

提升陽氣的水果:
車厘子 — 性熱,益氣健脾、祛風濕。
桃子 — 性熱,補心血、生津潤腸。
芒果 — 性熱,健脾益胃、止嘔止暈、解渴生津、利尿。
石榴 — 性熱,生津止渴、澀腸止瀉。
紅毛丹 — 性熱,滋養補血。

生津潤燥的水果:
梨子 — 性寒,生津清熱、潤燥、止咳化痰。
蘋果 — 性平,潤肺健胃、生津止渴。
杮子 — 性寒,清熱潤肺、止渴。
士多啤梨 — 性寒,生津止渴、利咽潤肺。
葡萄 — 性平,補氣血、健胃生津。

滋潤暢便的水果:

Pears- cold in nature, promote fluid production and clears heat, relieves dryness, cough and phlegm. 
Apples- mild in nature, moistens the lungs and strengthens stomach, promote fluid production and relieve thirst. 
Persimmon- cold in nature, clears heat and moistens the lungs, relieves thirst.

冬吃白蘿蔔行氣生津
冬天是白蘿蔔當造的季節,有個說法是「冬吃蘿蔔夏吃薑,不用醫生開藥方」。冬天容易出現燥熱痰多的清況,白蘿蔔正好可以潤肺、止咳、化痰,而且在天冷時大家多吃溫熱食物,腸胃易積熱,適量進食白蘿蔔能有助清熱消滯。屬性偏溫熱的牛腩煲、羊腩煲中常見配以白蘿蔔,亦採其制衡牛羊燥性的作用,也可減少吃肉類的滯脹感。

白蘿蔔 — 性寒,具健胃消食、化痰止咳、清熱利尿、生津止渴的功效,可紓緩消化不良、胃脹腹脹、噯氣、胃酸倒流,適合氣滯、血瘀體質、高血壓、高血脂及肥胖者食用。惟白蘿蔔有行氣功效,氣虛體弱、虛喘氣短、容易腹瀉、陽虛體質不宜食用,正在服用補氣中藥亦要避免,否則影響藥效。

As it is common to see dry-heat and phlegm issues in the winter, the seasonal radish is a good choice as it helps to moisten the lungs, relieve cough and phlegm. A lot of people may have more warm natured things in the winter leading to heat stagnated in the digestive system. Appropriate consumption of radish can also help to clear heat and improve digestion. Beef brisket or lamb brisket pots are common warm natured dishes, radish is a good complementing ingredient to include. 
Radish- cold in nature, can strengthen the stomach and aid digestion, relieve phlegm and cough, clear heat and promote diuresis, promote fluid production and relieve thirst. Alleviate symptoms of indigestion, abdominal bloating, frequent burping and acid reflux. Suitable for qi stagnation, blood stasis body types, and those with high blood pressure, high blood lipid and obesity. Radish, however, can also help to promote qi circulation, and it is not suitable for those with asthenic qi, shortness of breath, yang deficiency, and tendency to have diarrhea. 小心處理常見有毒食材
朱師奶:「近年接二連三看到因過量食用某種常見食材而中毒的新聞,該如何避免?」 CheckCheckCin:其實有毒的常見食材不多,而且多為生吃才有毒,例如秋冬當造的白果,芯的部份帶有小毒,尤其是生的,所以食用前建議除掉,並要煮熟以減低毒性,每次食用量以3至10克為宜。另外,是否空腹服用、年紀都會影響可吃的數量,5歲以下小兒不宜食用。

同樣要煮熟、並只能少量食用的食材還有北杏。大眾煲湯一般不會獨立使用北杏,多配合南杏同用,比例至少一比一。坊間出售的南北杏,一般已經去皮製熟,並已去除含最多毒素的杏尖減低毒性。如果購買到生北杏,記得先用沸水徹底煮熟才能食用。

四季豆、紅腰豆、黃豆及新鮮金針花,未煮熟時都含有輕微毒素,記得浸泡洗淨並徹底煮熟才進食。

如果進食以上食物後感到不適,出現暈眩、噁心、震顫、頭痛、嘔吐及腹瀉等徵狀,宜立即求醫。

Handle ingredients with toxins carefully 
There has been a lot of recent news regarding toxins poisoning, how can we avoid it?
CheckCheckCin: Common ingredients rarely have toxins, and most of the time, the toxins become an issue after over consumption. Take the seasonal ginkgo for example, the core has a bit of toxin especially when eaten raw, so we would recommend removing it before consumption and cook it to reduce the toxicity. Do not eat more than 3-10g each time. Other factors are whether they are eaten on an empty stomach, age, etc. Children under 5 should not have any. 
Another ingredient that should be consumed with caution is bitter almonds and they also need to be cooked. Most people will usually use both sweet and bitter almonds in soup and the proportion would be 1 to 1. Most of the sweet and bitter almonds sold are already cooked and the most toxic portions are removed. If you are buying bitter almonds raw, then remember to cook them thoroughly in boiling water.
Green beans, red kidney beans, soya beans, and fresh orange daylily all contain low levels of toxin when raw, so be sure to soak them clean and cook thoroughly before consumption. 
If you feel unwell after consumption of any above ingredients and experience dizziness, nausea, trembling, headache, vomiting or diarrhea, please seek medical help immediately.

冬吃白蘿蔔行氣生津
冬天是白蘿蔔當造的季節,有個說法是「冬吃蘿蔔夏吃薑,不用醫生開藥方」。冬天容易出現燥熱痰多的清況,白蘿蔔正好可以潤肺、止咳、化痰,而且在天冷時大家多吃溫熱食物,腸胃易積熱,適量進食白蘿蔔能有助清熱消滯。屬性偏溫熱的牛腩煲、羊腩煲中常見配以白蘿蔔,亦採其制衡牛羊燥性的作用,也可減少吃肉類的滯脹感。

As it is common to see dry-heat and phlegm issues in the winter, the seasonal radish is a good choice as it helps to moisten the lungs, relieve cough and phlegm. A lot of people may have more warm natured things in the winter leading to heat stagnated in the digestive system. Appropriate consumption of radish can also help to clear heat and improve digestion. Beef brisket or lamb brisket pots are common warm natured dishes, radish is a good complementing ingredient to include. 
Radish- cold in nature, can strengthen the stomach and aid digestion, relieve phlegm and cough, clear heat and promote diuresis, promote fluid production and relieve thirst. Alleviate symptoms of indigestion, abdominal bloating, frequent burping and acid reflux. Suitable for qi stagnation, blood stasis body types, and those with high blood pressure, high blood lipid and obesity. 朱師奶:「近年接二連三看到因過量食用某種常見食材而中毒的新聞,該如何避免?」 CheckCheckCin:其實有毒的常見食材不多,而且多為生吃才有毒,例如秋冬當造的白果,芯的部份帶有小毒,尤其是生的,所以食用前建議除掉,並要煮熟以減低毒性,每次食用量以3至10克為宜。另外,是否空腹服用、年紀都會影響可吃的數量,5歲以下小兒不宜食用。

同樣要煮熟、並只能少量食用的食材還有北杏。大眾煲湯一般不會獨立使用北杏,多配合南杏同用,比例至少一比一。坊間出售的南北杏,一般已經去皮製熟,並已去除含最多毒素的杏尖減低毒性。如果購買到生北杏,記得先用沸水徹底煮熟才能食用。

四季豆、紅腰豆、黃豆及新鮮金針花,未煮熟時都含有輕微毒素,記得浸泡洗淨並徹底煮熟才進食。

如果進食以上食物後感到不適,出現暈眩、噁心、震顫、頭痛、嘔吐及腹瀉等徵狀,宜立即求醫。

Handle ingredients with toxins carefully 
There has been a lot of recent news regarding toxins poisoning, how can we avoid it?
CheckCheckCin: Common ingredients rarely have toxins, and most of the time, the toxins become an issue after over consumption. Take the seasonal ginkgo for example, the core has a bit of toxin especially when eaten raw, so we would recommend removing it before consumption and cook it to reduce the toxicity. Do not eat more than 3-10g each time. Other factors are whether they are eaten on an empty stomach, age, etc. Children under 5 should not have any. 
Another ingredient that should be consumed with caution is bitter almonds and they also need to be cooked. Most people will usually use both sweet and bitter almonds in soup and the proportion would be 1 to 1. Most of the sweet and bitter almonds sold are already cooked and the most toxic portions are removed. If you are buying bitter almonds raw, then remember to cook them thoroughly in boiling water.
Green beans, red kidney beans, soya beans, and fresh orange daylily all contain low levels of toxin when raw, so be sure to soak them clean and cook thoroughly before consumption. 
If you feel unwell after consumption of any above ingredients and experience dizziness, nausea, trembling, headache, vomiting or diarrhea, please seek medical help immediately.

清甜滋味椰青雞火鍋
轉眼間已經來到年尾,這時候工作量往往遞增,周末放假實在需要好好放鬆一下!踏入立冬,是時候順應氣候變化,吃吃火鍋,與家人朋友好好聚一聚!近年不少餐廳都有售賣椰青雞火鍋湯底,吃起來味道清甜可口。椰香雞甜,其實材料和做法簡單,在家都能輕鬆做到。椰青性寒,正好減輕雞和火鍋的溫熱屬性。由於火鍋本身屬熱性食物,椰青雞與一般清湯火鍋一樣,整體屬性為微溫,加上沒有多加的調味和油分,是個相對養生健康的火鍋湯底選擇。

材料:椰青2-3個、新鮮雞1隻(切件,想更健康的可去雞皮)、水適量
做法:
1. 椰青切開頂部,倒出椰青水。
2. 將椰青水加入鍋中,再按個人喜好加入適量清水(可加至椰青水同等份量),用大火煮滾,然後加入雞件煮約30分鐘即成火鍋湯底。

素湯底版本:
材料:椰青2-3個、南瓜300克約半斤、去核紅棗4枚
做法:
1. 椰青切開頂部,倒出椰青水。
2. 材料洗淨,南瓜去皮,切塊,以白鍋炒香,將椰青水加入鍋中,再按個人喜好加入適量清水(可加至椰青水同等份量),用大火煮滾,然後加入南瓜及紅棗煮約30分鐘即可。

備註:
- 椰青可用現成包裝椰青水取代,但新鮮椰青更為清甜
- 可用鐵匙羹挖出椰肉加入湯底中
Tasty young coconut and chicken hot pot
With a blink of an eye, we’re nearing the end of the year already. Work tends to pile up so it is important to relax properly on the weekend. As we enter winter, it is the right time to hang out over hot pot with friends and family! A lot of restaurants have been promoting young coconut and chicken soup base as it is quite tasty.  The ingredients are simple and can be easily created at home as well. Young coconut is cold in nature and can balance out the warm nature of chicken in hot pot. As hot pot is a generally already a warm-natured meal, this is a healthier option. 
Ingredients: 2-3 young coconuts, 1 fresh chicken (cut into pieces, remove skin to be even healthier), water 
Preparation:
1. Cut off the top of young coconuts and pour out juice. 
2. Place coconut juice into pot and add in appropriate amounts of water based on personal preference (Or add in same proportion to coconut juice). Cook on high heat until boiling, add in chicken and cook for about 30 minutes and you have your soup base. 
Vegetarian version:
Ingredients: 2-3 young coconuts, 400g pumpkin (about half catty), 4 pitted Chinese red dates
Preparation:
1. Cut off the top of young coconuts and pour out juice. 
2. Rinse all ingredients thoroughly. Peel pumpkin, cut into pieces and fry without oil. Place coconut juice into pot and add in appropriate amounts of water based on personal preference (Or add in same proportion to coconut juice). 想增加湯水的甜度,大家在煲湯時都會加入蜜棗或者無花果乾,究竟何時加蜜棗?何時加無花果乾?其實煲湯沒有定律,應視乎你的體質和想調補的症狀而定,蜜棗和無花果都能為湯水提供甜味,但功效各異:蜜棗能生津潤燥,適合各種體質;無花果能潤腸通便、催乳,尤其適合紓緩便秘、消化不良、喉嚨乾等症狀。
另外,蜜棗由青棗切割多次後,加白糖煮過再曬乾而成;而無添加糖的無花果乾則是生曬而成,沒有額加入精製糖,但無花果本身的果糖含量則較高,因此有糖尿的病人兩種都不宜吃過多。
如果用無花果乾煲湯,白色和紫色外皮的無花果乾皆宜,但要注意過份潔白的無花果乾可能經過漂製防腐,有可能令湯帶酸味,所以購買時宜到有信譽的商戶購買,選擇無添加的生曬無花果乾更好。

滋陰潤燥湯水小貼士:
適當地添加滋陰潤燥食材如雪耳、沙參、玉竹、乾瑤柱、響螺、蓮藕等。

西洋菜雪梨海玉竹素湯
功效:滋陰清熱潤燥,紓緩天氣乾燥引起的眼乾、口乾、大便乾結等症狀。
材料:西洋菜300克(約半斤)雪梨2個、紅蘿蔔1條、海玉竹30克、無花果3枚
做法:
1. 所有材料洗淨。西洋菜很易藏有小昆蟲,應用鹽水泡二十分鐘,再用水沖水備用,雪梨去芯切大塊備用;紅蘿蔔去皮切大塊備用。
2. 鍋中加入約2500毫升水,放入全部材料,武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。

Figs can moisten the intestines and relieve constipation, promote breast milk production, making it suitable for those with constipation, indigestion and dry throat. 
Both candied dates and figs are high in sugar content so those with diabetes should avoid. 
If you are using dried figs, both the white or purple skinned ones are suitable. Note that dried figs that are overly white in color may have been bleached and may bring sourness to your soup. Be sure to choose a reputable place to buy from and try to choose ones that do not have additives. 
Tips:
Appropriately add in ingredients to nourish yin and relieve dryness such as snow fungus, polygonatum, glehnia root, dried scallops, conch, and lotus root.

立冬,冬季自此開始,古籍有云:「冬,終也,萬物收藏也。」隨著冬天來臨,草木凋零,萬物活動趨向靜止,部份動物進入冬眠狀態,養精蓄銳為春季做準備。人沒有冬眠之說,新陳代謝變得相對緩慢,宜益腎養精,補充熱量,打好根基好過冬。
立冬開始飲食宜以「溫補」為主,多吃豆類及堅果種子類,例如栗子、松子、黑豆,亦可多吃平和又易消化的魚類。香港的冬天並非十分嚴寒,宜先養好脾胃再進行溫補,多進食薏米、淮山、番薯等,多吃溫暖的米粥和食物,少吃生冷,避免吹風。

Today signifies beginning of winter. As trees and grass start to wither, living things begin to come to still and some animals enter hibernation to prepare for spring. Humans don't hibernate, but our metabolism slow down, it is suitable to nourish the kidney, preserve vital energy, replenish body heat, and form a strong foundation for winter. 
Your diet on winter should gently replenish, have more beans and nuts such as chestnuts, pine nuts, black soya beans. You can have more mild fish that is easy to digest. The winter in Hong Kong is not very brutal, so nourish your spleen and stomach before you replenish, have more coix seeds, Chinese yam, and sweet potato. Have warm congee and avoid cold/raw foods and avoid getting wind blown directly. 
Gentle reminders:
- get more sunlight to replenish yang qi, remember to apply sunscreen
- aside from your face, moisturize the body as well - wok fried chestnuts are a great snack for fall and winter - try not to have too much hot pot and keep to clear broth base - add in purple sweet potatoes and oats in your rice water to keep warm and relieve constipation

煲湯時加薑,將薑切成薄片即可,有人喜歡原塊薑用刀背拍一拍加入湯中,這個做法亦可。建議煲菜湯時可加入薑片,以減低菜湯的寒涼性;而烹調魚湯時亦宜加薑,因可解魚蟹肉之毒。
雖然薑好處多多,但要注意實熱體質及陰虛火旺的人不適合食用,以免火上加油。

CheckCheckCin: Ginger can be separated into tender ginger, raw ginger, aged ginger and ginger mother. Raw ginger is usually used in soups to warm the stomach and relieve nausea, promote perspiration and dispel cold. Ginger peel can promote perspiration and relieve bloating, so it is suitable for those with edema. Keeping the peel on ginger in soup does not affect the healing effect of dispelling cold. For those with edema, it would be beneficial to keep the peel. 
When adding ginger to soup, you can thinly slice the ginger. Some people like to put a piece in by just smashing it with back of the knife which is also ok. We suggest adding in more ginger slices when making vegetable soups to reduce the cool nature of vegetables. You should also add ginger to fish soup to relieve toxins in seafood. 
Although ginger has lots of benefits, note that those with hot body types and those with yin deficiency should avoid as it further adds to the fire in body.

紅棗被視為女士們的恩物,因為有補氣、養血、安神的功效,可使面色紅潤及手腳暖和,所以不少女生都會視飲紅棗水為補血養生之聖物。
在烹煮紅棗時或許大家也有這個疑問:「紅棗要先去核嗎?」因為有傳聞棗核燥熱,去核就可減低燥性。根據《名醫別錄》指出,棗核味苦性平,沒有多吃會燥熱的說法。紅棗適合氣虛、血虛及身體偏寒人士食用,這種體質的人均適宜多進食屬性溫熱的食物,但氣血旺盛的人,吃紅棗就有可能會上火,出現咽痛、口乾及暗瘡等偏熱症狀。
如果怕棗核帶有苦味,烹調時去掉棗核亦可,去掉棗核時順道把紅棗切開,亦有助加快出味。

養血安神茶療 - 紅棗桂圓茶
功效:補血安神、紅潤面色
材料:紅棗4枚、桂圓6枚
做法:材料用熱開水略洗一次,放入保溫瓶,注入熱開水焗10分鐘即可,此茶可反覆沖泡至味淡。
注意:感冒未清者、身體有偏熱症狀都不宜服用。

Many ladies like Chinese red dates as they help to replenish qi, nourish blood, and calm the mind. They also help to keep a rosy complexion, warm hands and feet. Many ladies choose to have Chinese red dates water.
But many wonder if it is necessary to remove the pit first? Some say that the pit makes the Chinese red date more ‘hot and dry’ in nature.  The pit is actually mild in nature but bitter in taste so keeping the pit does not make your food more hot or dry.  Chinese red dates are suitable for those with qi deficiency, blood asthenia and those with cold-natured bodies. These types of people should have things that are warm in nature.  Those with sufficient qi and blood may create fire in body from having Chinese red dates, leading to heat related symptoms such as sore throats, dry mouth, and acne. 
If you are worried about the bitter taste from the pit, then you can remove it before using. Cut open the date while you are removing the pit to allow the flavour to permeate faster.

Ingredients: 6 Chinese red dates, 6 longan
Preparation: Rinse ingredients with hot water and place into thermos.  Add in hot water and steep for 10 minutes. Tea can be re-brewed until its flavour weakens.

After a few days of sleepless nights, and I’m finally starting to get a decent length of sleep. But I still get so tired during the day from jet lag, so today I tried to beat the mid morning slump with a tea infused traditional Chinese remedy: @checkcheckcin Comforting red dates soy drink. It was a mix of red dates, juicy longan, osmanthus jelly, Liu An black tea, rice and (of course) soy milk •

My mum often brews a similar concoction at home (minus the milk and rice), so it was a bit like having a nostalgic comfort with a modern twist! This particular mix is said to help tiredness by replenishing blood flow ❤️💪

Skipping breakfast can lead to asthenic spleen, fatigue, weight gain, yellowish complexion, and edema. You have more to lose than to gain by skipping breakfast. You have an entire day to digest what you have for breakfast so go for a more nutritious meal!

秋天皮膚乾燥得令人忟憎,即使狂抹潤膚乳同潤唇膏都未能解救乾噌噌的肌膚?不妨在潤膚前多做一個步驟——磨砂,把死皮及多餘的角質層磨走,讓肌膚更有效吸收護膚品。在你上網搜尋哪個牌子的磨砂用品前,不妨走進你的廚房,因為天然又好用的磨砂品其實早就在那裡!

天然磨砂品:黃糖 / 紅糖
糖是天然的肌膚潤濕劑,能夠溫和打磨兼滋潤肌膚,去除暗啞角質,建議選用黃糖及紅糖,因為它們所以的微量元素及抗氧化物,比精製過的白糖高。磨砂時配搭油份、蜜糖、乳酪等成份,可適量減緩摩擦力,又可讓肌膚吸收更多養份。建議選用較幼身的糖,按揉時動作要輕柔,慢慢按至糖完全溶化,一星期一次即可,皮膚敏感者慎用。

配搭一:加橄欖油
功效:磨砂去死皮
材料:黃糖/紅糖1茶匙 + 橄欖油2-3茶匙
做法:黃糖/紅糖加入橄欖油中拌勻即可,磨砂後以溫水洗淨。

配搭二:加燕麥及乳酪
功效:滋潤補濕
材料:燕麥2湯匙 + 乳酪40克
做法:將燕麥加入攪拌機搗碎,加入乳酪拌勻,當燕麥軟身後,加入適量紅糖,敷面約1-2分鐘即可以溫水洗臉。

配搭三:加蜂蜜
功效:修復受損肌膚
材料:黃糖/紅糖2茶匙 + 蜂蜜3茶匙
做法:黃糖/紅糖加入蜂蜜中拌勻即可,磨砂後以溫水洗淨。

Find skin nourishing treasure in your kitchen
Dry skin in the fall can be quite irritating, you may find yourself constantly applying moisturizers and lip balm to no avail. Try exfoliating before you apply moisturizers and remove all the dead skins first to allow your skin to better absorb the skin care products. Before you go online to search for name brand exfoliation, try looking in your kitchen first and you may find natural and useful treasures!

Natural exfoliant: brown sugar
Sugar is a natural skin moistener to gently exfoliate and moisten t the same time. Brown sugar contains trace elements and antioxidants. You can add in oil, honey, or yogurt to decrease the friction on skin and allow your skin to receive from nutrients. Try to use finer sugars and gently apply to your skin until all the sugar has melted. Do this once a week and those with skin allergies should use with caution. 
Combo 1: add in olive oil
Effects: remove dead skin
Ingredients: 1 teaspoon brown sugar, 2-3 teaspoon olive oil 
Preparation: add sugar to oil and mix well, rinse with warm water after exfoliating. 
Combo 2: add in oats and yogurt
Effects: nourishing and moistening 
Ingredients: 2 tablespoon of oats, 40g yogurt 
Preparation: blend oats and add in yogurt. Mix well. When oats have softened, add in appropriate amount of brown sugar. Apply to face for 1-2 minutes and rinse off with warm water. 
Combo 3: add in honey 
Effects: repair damaged skin

Preparation: add sugar to honey and mix well, rinse with warm water after exfoliating.

一聽到「米水」兩字,有人立即聯想到洗米水,後者只是洗米後混濁的水 ,而米水則是中醫傳統養生智慧,《隨息居飲食譜》提及:「粥飯為世間第一補人之物」。我們這兩年一直與大眾分享的米水配方主要成分為紅米,白米及薏米次之。紅米及白米屬性平和,加入少量生薏米取其健脾滲濕功效。一人份的米水以紅米2湯匙、白米半湯匙、生薏米半湯匙,洗淨加入鍋內,以800-1000毫升水煮滾後調細火煮三十分鐘即可。天天煲米水喝,不要留過夜。
中醫理論認為「脾喜燥惡濕」,脾主運化,而粗糧多為穀殼類食物,穀類質燥,讓脾磨運,所以可以助健脾。紅米是糙米的一種,糙米和白米,均是由稻穀加工而成,區別在於加工程度,越精緻的米、營養豐富性越低,但卻更容易讓身體虛弱人士如病人、老人、小兒或脾胃虛弱人士所吸收。
我們未能控制先天所賦予的體質,後天的體格除了基於生活及飲食習慣,還要依賴脾胃的消化吸收、轉化功能,身體才能攝取飲食中的營養,各部分始能暢順的運作;所以才能說養好脾胃,等於養好消化系統,擁有健康基礎。白米又稱粳米、大米,可補氣養脾胃、除煩渴、長肌肉及止腹瀉,並容易被身體吸收,正因為它有如此高的親和性,任何體質人士均適合飲用,故以它來製作米水。

雪耳杏汁湯健脾潤肺
秋天的養生要訣首重「潤燥養肺」,因為秋燥傷肺,保持肺與呼吸道濕度正常,有助預防感冒出現。提到潤肺的湯水,很多人會想到杏汁白肺湯,杏仁潤肺,適合肺氣虛弱人士食用,不過這款湯水做法繁瑣,既要洗豬肺又要磨杏汁,很多人見到做法都卻步,今次我們改用杏仁粉來做杏汁素湯,做法簡單,素食人士也可滋養潤肺一番!

健脾潤肺湯水小貼士:
適當地添加健脾潤肺食材如雪梨、蓮藕、山藥、麥冬等。

木瓜雪耳杏汁湯
功效:健脾養胃潤肺,改善皮膚乾燥、暗啞等症狀。
材料:熟木瓜1個、薯仔2個、雪耳1塊、茨實40克、百合30克、蜜棗3枚、杏仁粉2湯匙
做法:
1. 所有材料洗淨,雪耳泡水約半日,把黑色低部剪掉切件備用;木瓜去皮去籽切大塊,薯仔去皮切塊備用。
2. 鍋中加入約2500毫升水,除杏仁粉外放入全部材料,武火煮至水滾,調文火煮約1小時。
3. 將杏仁粉加少許水調勻成粉漿,加入鍋內煮5分鐘,最後下鹽調味即可。

Soup to nourish spleen and moisten the lungs
The important thing to do in autumn is to moisten the lungs and relieve dryness. As the dryness can hurt your lungs, keeping a normal moisture level in the lungs and airways can help to prevent getting the flu. A lot of people think of almond and pork lung soup. Almonds can moisten the lungs, suitable for those with asthenic weak lung qi. However, this soup can be time consuming to make as you have to clean the pork lungs and make the almond juice. Many people stop just by looking at the recipe. We are recommending you use almond powder to simplify the process and make a vegetarian version to nourish yin and moisten the lungs! 
Tips:
Appropriately add in ingredients to strengthen the spleen and moisten the lungs. Examples are pears, lotus root, Chinese yam, and Ophiopogon japonicus.
Almond soup with papaya and snow fungus
Effects: strengthen the spleen, nourish the stomach, and moisten the lungs.  Alleviate symptoms of dry and dull skin.
Ingredients: 1 ripe papaya, 2 potatoes, 1 snow fungus, 40g fox nuts, 30g lily bulbs, 3 candied dates, 2 tablespoons of almond powder. 
Preparation:
1. Rinse all ingredients thoroughly. Soak snow fungus for half a day, and cut off black bottom. Peel and seed papaya and cut into large pieces. Peel potatoes and cut into pieces. 
2. Combine all ingredients except almond powder with 2500ml of water and cook on high heat until boiling. Simmer on low heat for 1 hour. 
3. Mix almond powder with small amount of water into a liquid mixture. Add into pot and cook for 5 minutes. Add salt to taste.

Ingredients: 1 ripe papaya, 2 potatoes, 1 snow fungus, 40g fox nuts, 30g lily bulbs, 3 candied dates, 2 tablespoons of almond powder. Preparation: 1. Rinse all ingredients thoroughly. Soak snow fungus for half a day, and cut off black bottom. Peel and seed papaya and cut into large pieces. Peel potatoes and cut into pieces. 2. Combine all ingredients except almond powder with 2500ml of water and cook on high heat until boiling. Simmer on low heat for 1 hour. 3. 神隊友:「最近我3歲的兒子間中流鼻血,雖然很快止血,但令我很擔心,是有甚麼毛病嗎?」 CheckCheckCin:父母不用太擔心,小朋友在秋冬天偶有流鼻血情況一般屬正常,因受秋燥影響,鼻黏膜變得乾燥,而小朋友本身鼻膜較薄,亦常有搓鼻、挖鼻等動作,容易弄致鼻腔出血甚至流鼻血。如果小朋友屬痰熱蘊肺型體質,平日多吃煎炸油膩、重口味食物,加上睡眠不足,就更容易流鼻血。
在乾燥天氣想避免流鼻血情況,要鼓勵小朋友多喝蜂蜜水,有需要可以用蒸氣潤鼻,以保持鼻腔濕潤,戒掉挖鼻的不良習慣,少吃煎炸油膩食物,並且適量飲用涼血滋潤湯水或茶療。

秋燥流鼻血茶療 - 雪梨茅根茶
功效:潤肺涼血止血,紓緩因乾燥而流鼻血的症狀
材料:雪梨1-2個、雪耳半塊、新鮮茅根40克(約1兩)、冰糖適量
做法:
1. 所有材料洗淨,雪耳泡水浸半日;雪梨去皮去芯切大塊備用。
2. 鍋中加入約1000毫升水,放入全部材料,武火煮至水滾,調文火煮約1小時,最後下冰糖調味即可。

流鼻血處理方法:
先將頭微微向前垂低,用手指輕按壓兩邊鼻翼,改為用口呼吸,約1-2分鐘後放手,如血仍然流出就重覆上述動作至止血為止,如果超過10分鐘仍未止血,或者出現次數頻密,例如一周數次,建議就醫處理。

Managing Children Nose Bleed in the Fall
My 3 year old has been having nose bleeds, but the bleeding stops quickly. I am quite worried, what is the issue?
CheckCheckCin: Children having nose bleeds in the fall is nothing to be too worried about as it is normal.  Due to the dryness, the nose membrane becomes dry, as kids have thinner membranes to start with, rubbing or picking of the nose can lead to nose bleeds. If your child has phlegm heat accumulation in the lungs, frequently has oily fried or heavy flavoured foods, coupled with inadequate sleep, he/she will be prone to nose bleeds. To avoid this situation, encourage your children to have more honey water, use steam to moisten the nose, stop picking or rubbing their noses, avoid fried and oily foods, appropriately consume nourishing soups or healing remedies.
Tea remedy for fall induced nose bleeds- pear tea with couch grass root
Effects: moistens the lungs, cools bloods and relives bleeding. Alleviate dryness related nose bleeds.
Ingredients: 1-2 pears, half a snow fungus, 40g fresh couch grass root (about 1 tael), suitable amounts of rock sugar 
Preparation:
1. Rinse all ingredients thoroughly, soak snow fungus in water for half a day. Peel and core pears and cut into large pieces.
2. Combine all ingredients with 1000ml of water, and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add in rock sugar to taste. (con’t in comment)

Tips to prevent dry lips
- have honey water to replenish fluids and increase setting on your humidifier - avoid spicy things and have ingredients that nourish yin and relieve dryness such as ophiopogon japonicus, fig, snow fungus, honey.
- have foods that strengthens the spleen such as white rice, Chinese yam, sweet potato and coix seed
- sleep and wake up early, avoid late nights 
Avoid - licking your lips as the moisture on your lips may evaporate with your saliva - removing peeling skin as it may become a wound - eating spicy, oily and fried food as that will hurt your yin and further use up body fluids

常長倒刺要養血潤燥
秋天來到,手部皮膚乾燥,倒刺就更為放肆,數隻手指頭都見到它的踨影,一時忍不住手把它拔掉,結果是拔出更大的傷口,甚至會流血、手指頭紅腫,嚴重更有可能導致甲溝炎。
中醫理論中倒刺稱為「逆剝」,即皮膚逆向的剝脫,手指指甲邊緣的皮膚枯剝倒卷而翹起來。主要成因為皮膚乾燥,尤其是雙手經常接觸洗潔精和洗手液的人, 皮膚乾燥情況會加劇;而血虛、陰虛體質的人較易出現倒刺,因為指甲為「血之餘」,要氣血運行得好,才可滋養指甲。
處理倒刺時不宜強行用手拔掉,宜用已消毒清潔的指甲鉗把倒刺剪掉,如果倒刺較為硬身,可先浸暖水軟化後才剪掉。平日多注意養血潤燥,例如飲用黑豆黑芝麻豆漿,也有助滋潤指甲! 
養血潤燥食療
黑豆黑芝麻豆漿-
功效:行氣活血,養甲烏髮,改善血虛症狀
材料:黑豆1湯匙、黑芝麻粉1湯匙、豆漿1杯、黃糖適量
做法:
1. 用白鑊將黑豆炒至豆皮裂開,搗碎,與黑芝麻粉一同加入保溫壼。
2. 將豆漿(或鮮奶)煮熱,倒入保溫壼中拌勻,加入適量黃糖調味即可。
備註:一星期可飲用2-3次。脾虛腹脹、大便稀爛者慎服;尿酸或糖尿病患者不宜服用。 
護手小貼士:
- 洗手不要過於頻密
- 減少接觸洗潔精,宜戴手套
- 洗手後塗抹潤膚霜,記得同時按摩指甲邊位
- 修剪指甲時,用指甲銼把指甲邊弄平圓滑

Nourish blood and relieve dryness to prevent hangnails
Fall is here and your hands might be dry and hangnail growth can get out of control. Sometimes you can’t help but pull on it and create a wound that may bleed, swell, and even lead to Paronychia. 
Chinese medicine believe hangnail is exfoliation of the skin, and it is usually due to skin dryness. Those who are always in contact with cleaning agent, the dryness can worsen. Those with blood asthenia, yin deficiency are prone to hangnails as nail health is a representation of healthy qi and blood circulation. 
When handling hangnails, do not forcefully tug at it, but use a sanitized nail clipper to cut off. If the hangnail is hard, then soak in warm water until soften before you cut. Be sure to nourish blood and relieve dryness, try having black soy beans and black sesame soy milk.

無花果燉梨生津潤燥
秋天乾燥,大家都想吃甜品滋潤一番,燉雪梨向來是秋日甜品人氣排行榜的第一位,因為吃梨能生津潤燥,可以紓緩秋燥容易引起喉嚨痛、聲音沙啞等不適,特別適合經常使用喉嚨說話和唱歌的人士,亦可以舒緩小朋友痰熱口乾,有黃痰的症狀。
雖然蒸燉過程可減輕梨的寒涼屬性,但建議脾胃虛寒人士、易有腹瀉及寒咳人士慎吃,以免加重症狀。

無花果玉竹冰糖燉梨
功效:生津潤燥、健胃清腸
材料:雪梨1個、乾無花果2枚、玉竹15克、冰糖適量
做法:
1. 將材料洗淨,雪梨將頂部位置切開,挖去梨芯。
2. 在梨中心加入無花果玉竹及冰糖,蓋上梨蓋後用牙籤固定,放入大碗中。
3. 鍋底加入水及蒸架,用武文煮滾水,放入梨,用文火隔水蒸燉1小時即成。
備註:脾胃虛寒人士、易有腹瀉及寒咳人士不宜。

It gets quite dry during autumn and many crave desserts that can relieve the dryness and steamed pear is a popular choice. Pear can promote fluid production and relieve dryness, alleviate dryness induced symptoms such as sore throat and coarseness in voice. It is especially suitable for those who frequently speak and sing. For children with yellow phelgm and dry mouth, this is a suitable choice too. The steaming process can reduce the cold nature of pear but those with asthenic cold spleen and stomach, prone to diarrhea, or those with cold cough should still avoid.

Effects: promotes fluid production and relieves dryness, strengthens the spleen and clears intestines
Ingredients: 1 pear, 2 dried figs, 15g polygonatum, appropriate amounts of rock sugar
Preparation:
1. Rinse all ingredients thoroughly. Cut off top of pear and remove core. 
2. Add in figs, polygonatum and rock sugar into the core of the pear. Put the top of the pear back on and stabilize using tooth picks. Place the pear onto a large bowl. 
3. Add water to wok and place steam rack in. Cook on high heat until water is boiling and put in the bowl with pear. Steam on low heat for 1 hour. 
Note: not suitable for those with asthenic cold spleen and stomach, prone to diarrhea and with cold cough.

潮流講環保,你有身體力行嗎?除了減少使用即棄用品,我們還可以好好利用看似是「廢物」的廚餘,製作環保酵素,有用過的朋友都讚它是萬用清潔力,尤其對付爐頭油污非常見效!重點是做法並不複雜,發酵而成的酵素液,經過稀釋後可當成清潔劑,可以洗碗、拖地、清潔廚房油脂污垢、清洗蔬菜水果去農藥甚至殺蟲等。雖然成份天然,但皮膚敏感人士使用時要注意酵素液的酸度和濃度會否影響皮膚。

材料:新鮮果皮、黑糖/黃糖、水、能封口的塑膠容器 (黑糖/黃糖:果皮:水 的比例 = 1:3 :10)
做法:
1. 將果皮切成小件備用。
2. 容器中加入水及黑糖攪拌至完全溶解。
3. 將果皮加入容器中拌勻。
4. 蓋上瓶蓋,於瓶身註明日期,置於陰涼通風處發酵3個月便可使用。

注意事項:
- 除了新鮮果皮,用其它鮮垃圾亦可以,包括:鮮樹葉、未煮過的蔬菜或植物。
- 避免使用魚、肉或有油份的廚餘,會使酵素有腐臭味;多放橙皮、檸檬皮、西柚皮等味道會較清香,而酸度會較高,去污力亦較強。
- 如果未能收集足夠份量的鮮垃圾,可陸續加入,從最後一次加入起計發酵3個月。
- 容器內預留3/10空間,以防止酵素發酵時溢出容器外。
- 發酵過程會產生氣體,記得每天將瓶口稍微扭開釋放氣體,一星期後不產生氣體就不用此步驟。
- 不時搖晃容器令廚餘浸泡在液體中。
- 一個月後可以扭實瓶蓋,直至放置3個月後即可使用。

DIY Environmental Multi-Purpose Cleaner
Everyone talks about being environmental, but is everyone proactively doing it? Aside from reduction of disposable item usage, we can also make good use of kitchen waste to make environmentally friendly enzymes which makes for a great cleaner, especially with stubborn oils around the stove! It is also not difficult to make, you can use the cleaner for dish washing, floor cleaning, kitchen cleaning, even to kill pesticides in vegetables. Although the ingredients are natural, those with skin allergies should handle with care and ensure the acidity and dilution is appropriate. 
Ingredients: fresh fruit peel, brown sugar, water, resealable plastic container
(the proportion of sugar to fruit peel to water should be 1:3:10)
Preparation:
1. Cut up peel into small pieces.
2. Add in water and sugar into container and mix until sugar is completely dissolved.
3. Add in fruit peel.
4. Date the container and place in cool place for 3 months. 
Note:
- Aside from fruit peel, you can also consider other fresh ingredient waste such as leaves, uncooked vegetables or plants.
- Avoid using fish, meat or waste with oil as it may create a bad odor in the enzymes. Using citrus fruits like orange, lemon or grapefruit can create a more fragrant cleaner with higher acidity which makes it a more effective cleaning agent.
- If you do not have enough waste, you can add in over time, and count the three months from the last time you added in kitchen waste to the container.

芫茜皮蛋湯降虛火
不少人覺得芫茜清熱,印象可能來自芫茜皮蛋湯,芫茜主要是透疹開胃的作用,其實皮蛋才是清熱下火之物,皮蛋是鴨蛋以石灰、鹽等醃製而成,屬性偏寒,有清熱功效,能舒緩口瘡、喉嚨痛、口臭、皮膚乾燥等症狀。惟鴨蛋屬於發物,有皮膚問題或暗瘡等不宜服用。煲芫茜皮蛋湯時可加入茶瓜,可加強清熱降火之效,茶瓜為醃製過的青瓜,雜貨店及醬油店有售。

降虛火湯水小貼士:
烹煮降虛火湯水可選用以下食材:花旗參、石斛、沙參、玉竹、羅漢果等。

2. 加入鯇魚片煮至翻滾,魚片熟後加入適量鹽調味即可。

Cilantro and century year soup for night owls to lower heat
A lot of people believe cilantro can clear heat and it might be due to cilantro and century egg soup. Cilantro’s main healing effect is to relieve rashes and stimulate appetite. Century egg is the ingredient to clear heat. Century egg is made by preserving duck eggs with ash and salt. It is cold in nature, can clear heat and alleviate symptoms such as canker sores, sore throat, bad breath, dry skin. Duck egg, however, is a stimulating ingredient so those with skin issues or acne should not have it. When making cilantro and century egg soup, you can add in preserved cucumber to further increase the heat clearing effects. 
Tips:
When making soup to lower heat, you can use these ingredients: American ginseng, dendrobium, polygonatum, radix adenophorae, and monk fruit. 
Grass Carp Soup with Century Egg and Cilantro
Effects: clear heat, alleviate symptoms such as bad breath, canker sores, swollen and painful gums. 
Ingredients: 5 bunch of cilantro (with root), 1 century egg, small amounts of preserved cucumber, 160g sliced grass carp
Preparation:
1. Rinse all ingredients thoroughly. Peel century egg and dice. Boil 1500ml of water in pot. When boiling, add in cilantro, preserved cucumber and century egg and cook for 10 minutes. 
2. Add in grass carp and cook until its boiling again and fish is cooked. Add salt to taste.

Boil 1500ml of water in pot. When boiling, add in cilantro, preserved cucumber and century egg and cook for 10 minutes. 2. Add in grass carp and cook until its boiling again and fish is cooked. Cilantro is a polarizing ingredient, you either love it or hate it. According to Chinese medicine theory, cilantro is warm in nature and can be boiled in water to be used as an external rinse which can relieve ecema, hives and chicken pox. 
Cilantro- warm in nature and is a fragrant vegetable that can strengthen the stomach. It can promote sweating and relieve rashes, aid digestion. Suitable for those with cold-wind flus, as well as those with poor appetite and abdominal bloating. Those with cold natured bodies may see improvement to cold limbs when eating cilantro. Not suitable for those with heat related symptoms such as acne and canker sores.

很多人喜歡吃麻辣火鍋甚至麻辣味道的食物,喜歡麻麻辣辣的刺激味覺,麻辣火鍋一般會加入大量辛香料例如花椒、辣椒、桂皮、八角、茴香、丁香、孜然製作,中醫理論認為辛香料都有驅寒袪濕的功效,對畏寒人士來說的確有驅寒作用。然而火鍋屬性熱之物,多吃易上火,加重濕熱、陰虛體質症狀。而氣血兩虛體質人士亦不宜多吃辛辣食物,以免氣血辛散,令氣血更虛。如屬氣滯血瘀體質人士,偶一為之行氣活血,疏疏肝氣,亦未嘗不可。當然,想吃火鍋的話吃清湯火鍋會比較健康。

火鍋後清熱茶療
功效:清熱解毒,紓緩因進食偏熱食物引致的偏熱症狀如口瘡、暗瘡、口臭等
材料:雞蛋花3-4朵、糖冬瓜2-3條
做法:洗淨放保溫瓶,以熱開水沖洗一遍,注入熱開水焗約5分鐘至花香味透出即可,可反覆沖泡至味淡。
注意:脾胃虛弱、容易腹瀉人士不宜飲用。

I've been so addicted to spicy hot pot lately. My body is naturally cold so spicy hot pot would be a good balance right?

CheckCheckCin: some people love spicy hot pot to the point tbey prefer the spicy level to be numbing. Spicy hot pot is made by adding a lot of spicy or warm herbs such as Sichuan pepper, chili pepper, cinnamon, star anise, fennel, clove, and cumin. These herbs can dispel cold so it can be suitable for those with aversion to cold. However, spicy hot pot is hot in nature, can lead to excessive fire in body and damp heat and yin deficient symptoms. Those with asthenic qi and blood should not have hot pot either. Those with blood stasis can have it occasionally to promote qi and blood circulation. It is still best to have hot pot with a clear broth. 
Post hot pot healing tea to clear heat 
Effects: clear heat and detoxify. Alleviate symptoms induced by eating hot natured foods. Symptoms include canker sores, acne,  and bad breath. 
Ingredients: 3-4 plumeria, 2-3 sticks of sugared wintermelon
Preparation: rinse ingredients and place into thermos. Rinse with hot water once then steep with hot drinking water for 5 minutes until fragrant develops. Tea can be rebrewed until flavour weakens. 
Note: not suitable for those with asthenic spleen and stomach or those prone to diarrhea.
