This recipe is from Carlene Thomas RDN: “With a standard potato, people tend to rely on sour cream, a ton of butter and cheese to flavor this side. But with a sweet potato, it’s already packed with flavor (they truly are sweet) and they’re very moist (sorry). To balance out the natural sweetness I paired it with harissa and a little salt and pepper and whipped it with a whisk attachment on a stand mixer. Add MSG when whipping to balance the sweetness of the sweet potatoes and round out the flavor and make them more savory.”⁠

Growing up, did anyone in your house use Ac’cent? What are your thoughts about MSG? As a child of the 70s, I took it as fact that MSG routinely caused headaches and other symptoms mainly from eating food at Chinese restaurants. My nana had Ac’cent in her cupboard but I thought it was just a salt substitute.

When Ajinomoto asked me to go to Japan to learn about MSG of all things, I was a bit bamboozled. I couldn't define MSG but like most, my perception of it was not pretty.. Had it been the beginning of this blog's lifetime when I was struggling with orthorexia, I would've NEVER considered writing this piece. Fear presided over facts. 
But alas, I have grown. As a media dietitian. As a writer. As a restauranteur. But mostly, as a human being craving a fuller life. And man, did I have space to grow. 
My past experiences taught me flexibility and grace. They equipped me with the tools I needed to create a much healthier, more curious and open-minded perspective on food and wellness culture. 
I'm so grateful to not be now where I was then. To be willing and able to live in the present and experience other parts of the world. 
The intricate cuisine, the selfless culture, the respect for people and planet, the breathtaking landscape...Japan is truly remarkable.

I learned more about umami at delicious dinner sponsored by #ajinomoto at the @tasteworkshop recently. I already knew umami-rich foods include super-ripe tomatoes, Parmesan cheese, and mushrooms. #yum now you know why.

I also knew MSG provides that umami flavor, BUT I learned some interesting facts about this flavor enhancer. It's a great way to drastically reduce sodium in your cooking while bumping up flavor - especially for vegetables. And, that news about it being hazardous to your health? It's fake, and based on one person's story that got blown up by the media. There's no evidence that it causes harm or a negative reaction.

As most of you know, last month I was in Japan learning about all things umami and MSG - I’m SO excited to share with you my recap that’s now live on my blog! Before going, the most common question I got was: isn’t MSG bad for you?! Honestly, I had assumed the same thing. Being in Japan taught so much, but mostly this: most of us don’t even know what MSG actually is. 
A super spark notes version is that MSG is made of the amino acid, glutamate + salt. An MSG sensitivity is highly unlikely and an allergy to it is actually not possible. If you’re interested in nutrition, food, or are just wondering what the heck MSG actually is, I highly recommend reading more on the blog. A TRUE Japanese breakfast buffet with the crispiest cukes + ponzo dressing! 🤩 Yesterday we drank sake by the sea in our kimonos, experienced a traditional tea ceremony, ground tencha leaves into matcha, and slurped (it’s rude not to here!) with and without MSG (sodium with glutamate, an amino acid). MSG is made from fermented sugarcane or corn. Fermented foods are also high in glutamate (fermentation breaks down protein so amino acids can bind to flavor receptors on the tongue) and is found naturally in foods like kombu, parmesan, tomatoes, meat, etc. Stay tuned for more on the science and misconceptions later. In Japan, they place a ton of importance on the quality and enjoyment of food. As a chef layering flavors is our biggest and to me most important part, today seeing the process of making katsuobushi was just amazing! This is just another way we can add smoky umami flavor.....also wanna touch on the subject that adding msg is “cheating” in the chef world, I think that’s nonsense especially when here in japan they can put a broth in front of you with and without and the flavor difference is undeniably better, I challenge you to give msg a chance :)
